Watching for the first time from Minnesota… you have been featuring the Philippines quite often and you caught my attention. Keep it up guys and hope you visit our country soon as pandemic is over.
I think they are suiting the taste for japanese people by making it less salty, or less sour. Sinigang is supposed to be super sour to be super tasty here and for sinigang na hipon it should taste sour but with sweetness of the shrimp which is really good. A sinigang that is not (satisfactory for filipinos kind of) sour is not really enough, or so just for my family. In terms of adobo, it should have sauce and its really tasty if it's thick (consistency) and spread on rice. If you eat here in philippines you may notice a sudden change of foods being too sour, too sweet, or too salty because one bite from the dish is intended next with a spoon of rice.

I think they are suiting the taste for japanese people by making it less salty, or less sour.
Sinigang is supposed to be super sour to be super tasty here and for sinigang na hipon it should taste sour but with sweetness of the shrimp which is really good. A sinigang that is not (satisfactory for filipinos kind of) sour is not really enough, or so just for my family.
In terms of adobo, it should have sauce and its really tasty if it's thick (consistency) and spread on rice.
If you eat here in philippines you may notice a sudden change of foods being too sour, too sweet, or too salty because one bite from the dish is intended next with a spoon of rice.
