No, it doesn't need any cream or garlic, my friends!! This is the original recipe for Fettuccine alfredo.
1lbs Fettuccine pasta
6.5 oz parmigiano reggiano
10 tbsp unsalted water
roughly 1 1/2 cups salted pasta water

Fun fact:
In Italy we call it "Pasta burro e parmiggiano" which means "Pasta with butter and parmesan"

Fun fact:
'Burro' means Dumb in Portuguese and 'Pasta' means paste (or folder), so "Pasta burro e parmiggiano" could be translated to "Dumb paste and parmiggiano", which is silly
I feel like adding pasta water makes the sauce too soupy. So instead of straining the pasta and adding it later, i just scoop out the pasta straight into the parmesan and butter and the water that the pasta brings with it adds the perfect consistency

for this pasta you need a ton of starch in pasta water. Traditionally they reuse the pasta water and cook all the portions of pasta in one pot. That way the pasta water gonna be starchy as hell and the sause is gonna be thick and creamy. You can mix a bit of starch and water and add it to the pot with water and pasta to mimic the reused water.

I was thinking the same thing! Maybe he is acting like that to get more views and subscribers! But I cannot see any humor in kicking the fridge. The fridge is keeping his food for him. In our culture we are thankful and have respect for everything! Like your bed, pillow a roof over our head etc etc. Maybe it's funny to others but I cannot see it. However he is a good cook though!

I tried this and normally I’m down for the simple and authentic dishes but I have to honestly say that I enjoy a modern home made Alfredo more. I would personally use the authentic Italian parm along with cream

It does, he's wrong. He's making something entirely different, not fettuccine Alfredo. First he has some melt the butter, then add the dairy/cream, then heat that up until right before it simmers and make sure you take that off the stove top immediately before putting in the grated cheese. Then you slowly stir the grated cheese until it melts OFF the flame. Optionally, depending on how much you're making, you add a tad bit of nutmeg to give it that special fettuccine Alfredo flavor! What he's making here is nothing more than glorified spaghetti with butter and grated cheese on top. This is not the fettuccine Alfredo invented by the famous restauranteur who put it on the map in the first place, which differentiated it from spaghetti with butter!

The original “fettuccine Alfredo” was literally just pasta al burro which is butter and parmigiano, when the dish came to America and got big people started adding all kinds of other stuff to it (most notably cream to help emulsify the sauce) what’s made in this video is the original pasta al burro.

And there’s a reason why fettuccine Alfredo now has new ingredients in a new identity, simply because butter and cheese back at the turn of the 20th century here in America had nowhere near the quality it had back in Italy. Spaghetti with butter is still around, people eat it all the time, but if you serve that in any fine restaurant- cooked dry fettuccine pasta (this simply can’t be made with fresh pasta) with a slab of butter and a bowl of grated cheese, you are going to be looked at in a very twisted manner nine ways from Sunday if you order fettuccine Alfredo. I don’t think it impresses anyone if back in Italy fettuccine Alfredo is considered spaghetti with butter, if that’s what they’re actually serving Americans. The identities have changed and have been established, and I don’t know anyone who would book a Parillo tour to Rome because they can’t wait to slurp up some impressive spaghetti with butter, except perhaps you. Alfredo has had a new picture on his passport well before the 21st century, and that’s what people expect to see when they meet him.
