RECIPES:
Chai concentrate (I combine 50/50 with almond or oat milk) amzn.to/3gqSaeb
Carnitas Jackfruit - Drain can of jackfruit and slice as shown. Sauté jackfruit with 1/2 an onion (roughly chopped) in 1 TBSP of avocado oil. Sauté until the onion is translucent then add 1 tsp smoked paprika, 1 tsp garlic powder, 1 tsp chipotle chili powder, 2 tsp cumin, salt, and pepper. Add 1/2 cup of water and the juice of one lime. Let simmer for 20-30 min until liquid is absorbed and jackfruit is tender.
Baked Tofu - Press and dry off a block of regular to firm tofu, cut into cubes, toss in 2 Tbsp of cornstarch. Bake at 400 for 20-30 minutes, depending on cube size, until crispy.

Go-to hummus recipe - Blend a drained can of chickpeas, 3 Tbsp of olive oil, the juice of a lemon, 2 Tbsp of tahini, 2 cloves of garlic, salt + pepper in a food processor until smooth. Top with smoked paprika and olive oil.

Cashew crema - Soak 1 cup of raw cashews overnight or for 10-20 minutes in boiling water. Blend cashews in a food processor with 1/2 cup of water, the juice of a lime, a pinch of lime zest, 1 tsp of ACV, and 1-2 tsp of chipotle peppers in adobo sauce, until as smooth as possible.

hey Lindsey! just wanted to let you know that although oats are naturally gluten free they often get contaminated with gluten so people with celiac disease or gluten sensitivity should keep an eye open for gluten free oats since these oats are not allowed to contain traces of gluten.☺️
Was just about to comment the same thing, and glad someone else said this, too. I've been GF for almost 20 years. Cross-contamination with foods that you would think would be safe is a HUGE concern. There are many great ideas in this video, but many things I would never eat, too, due to Celiac Disease. Being truly gluten-free takes major work, and it's a learning process, for sure.

Hi Lindsey! A suggestion I have (if you haven’t tried it already!) to amp up the flavor of the jackfruit carnitas is: using canned chipotle (sauce or chiles) instead of powdered chipotle, you can toss it in once you add your lime juice and water! I cook it this way usually when I want to add chipotle to a protein and the flavor is amazing
My diet is similar to yours. My kids are 21, 18 and 13... they all still live at home and they eat meat and gluten. My husband's diet is like the kids' but he has to eat small, low-fiber meals due to a health condition. It's a juggling act trying to please everyone in the household and stick to my personal dietary guns. Subscribed to your channel! 💗

The BEST gluten free pasta brand i've tried so far is the delallo GF line. The trader joe's fusilli used to be my favorite and the delallo pasta topped it. It seriously tastes like normal pasta-- give it a try, it's amazing.

if you learn to make the dressing they use on the shroomami bowl pls PLS i beg of you to share bc i always go there for that salad and i started making it from home when covid hit but i can never figure out the dressing!
This is literally the same diet I’ve been following! I have celiac and have really been trying to find more gf recipe ideas that are also vegan, so I love seeing this! Also Trader Joe’s used to make these AMAZING edamame rice crackers (like those soy ones but like 100x more savory and delicious) that were addictive, but of course they discontinued them 😭
Also! For GF pastas, I highly recommend the brands Jovial and Ancient Harvest (you can usually find them at Whole Foods) ...I’ve tried a LOT of pastas and those are literally identical to the regular stuff (I don’t even miss it)
Tip for getting any type of cashew cream/sauce smooth: to save time and to get cashews really soft boil them for as long as you can (I’ve done up to half an hour or more in the past) and they get really soft this way. Also I don’t have a high speed blender at all but if you just keep blending and be patient you’ll get the lumps out!
I put a cup of cashews in a 4 cup Pyrex container, cover with water and cook in the micro for about 4 minutes. Then I rinse the cashews and add enough water to about 3/4 of the height of water. Then blend in my vitamix with lemon, salt.
Oh, I let them sit for about 20 minutes before rinsing and blending. This softens them nicely.
