If you watch really closely you'll see it appears right as John slams his dark glove behind the sword. Seems as if the eye is transparent and reflects the color of his glow through it. I want to be wrong, but this seems like nothing although it is curious to have the sword be there and the closeup shot like this to begin with. There are so many ways to have John re-surface that does not require the sword perfectly aligned with the waters edge and a closeup shot of it as John gets back up, but yeah. Having a hard time believing this is anything else than a reflection.

The sword did NOT open its eyes. The eyes were foggy and frozen because of the cold, and when water touched the eyes the fog was washed away. Simple as that.
