Great information mam, in Maharashtra & North Karnataka it's a staple. We have been eating this for ages.In kannada it's called " Gurellu or Uchhellu". You said it has omega 3 fats, as we know vegitarian source of omega3 are very few, flaxseed,walnut,Desi cow ghee. We can't use flaxseed oil for cooking as it's get rinsed at high flame. Can we use Niger seed oil instead? In North Karnataka it's sold in tons,we can easily get it's oil in cold press oil mill. Is this oil good for cooking? Or one has to just use it for dressing. Another question. I read online that this seed has 18g of protein per 100g, is it true?

Yes you can... just add the seeds while cooking.
