    I've moved from the farm and now live in a townhouse, I never really thought I'd miss canning and gardening but I really do. Enough so, that I've got a garden all over my decks. I store my jars with the rings on to keep them from chipping and I've also found that the old style milk cartons are great for storing and stacking my canned food sense I don't have much storage now. 9 quart jars to a crate and they stack...

    Wow. I really am amazed at what all you’re doing. I can’t imagine this world rocking on long enough for me to ever implement all these great ideas, and I wish I could’ve started twenty years ago. But I’m excited to do the things I can do with the time I’m given. Again, thanks for your videos.

    I have a video on my channel for canning peaches, both raw pack and hot pack. Actually, I had the same floating of peaches with both methods. Plus after a year on the shelf, they both settled down, and if they had not been labeled, I would not have been able to tell the difference. I also have dehydrated peaches. They are very good! If I use "cling stone" peaches I make jam, and then cook the peelings for juice and jelly. Plus I've canned peach pie filling, too. This year I did make some peach vinegar (from your videos). I use free stone for canning and scald and then just discard the peelings. I do want to try your cream sickles with almond milk too (I am allergic to all forms of dairy now). I always look forward to your videos and save most of them.

    We did 110 jars of Cherries last year. We have done some peaches here but they are really small here in Chile and we are used to those South Carolina Peaches that are like grape fruit! Nice job. Jim in Chile

    When I was growing up my grandparents would make peaches in their own juice and freeze them in freezer bags so over the winter they could have waffles with peaches.

      My mom used to freeze up the peaches from our trees when I was in my teens. We would scald, peel, slice, and then she would sprinkle fruit fresh on them and freeze them in ziplock bags. They were great for all kinds of treats through the year!

    Oh my goodness, listening to you and canning peach peeling and pit jelly, my husband's obsession! Great idea on the peach butter. We are so blessed to have a organic orchard 3 miles im our house!

      Even there? Usually you can get them for less when they are local. Peaches to not grow well on this side of the mountains but grow amazing on the East side where I grew up so they have to be trucked in here thus raising the price. I saw NON organic ones in our local store for $4.99 a pound but got these organic ones from Costco for $2.19 a pound

      @@RainCountryHomestead Yes indeed they grow great in SE WA - we'd ride past the orchards and grab a peach or two to snack on. Most farmers gave us the okay (apples, peaches, cherries, plums, apricots, etc). Many U-Pick orchards back when I was a younger person, they generally would joke you about weighing you before and after you picked... LOL
      I sure miss the fresh tree-ripened peaches and other fruits.

      @@RainCountryHomestead We had a pear tree, cherry tree, and peach/plum tree. Those were THE BEST FRUIT EVER, the closest in stores would be nectarines I guess... but, especially nowdays, they're not near as tasty. Also there were huckleberries growing on the east fenceline... blackberries in profusion on both banks of the creek on the east side of the property, also on the property (yeah in WA you can't get rid of those weeds). Neighbor with an apricot tree was kind about letting us pick them ripe (we always asked, of course) and neighbor to the NW had an apple orchard we could ride through and pick crisp ripe apples. We would ride down the middle of the creek picking tons of berries from each side. Such great childhood memories!

    3rd video I've watched hoping to find steps that doesn't require you to make syrup...guess I have too and this video explains it well which is not a surprise, I'm subscribed to your channel 😊
    I will be using your suggestions...all but the jars....I am re-using used qt size salsa jars...they will work and it's a good way to use them up.... I've got quite a collection of them....going to do some peaches, apples and pears...I really enjoy your videos...Thank you ma'am.

    Oh Wow that was a great video!!I make peach crumble,Can them,dehydrate them,peach jam...etc etc...But a lot of people don’t think to use them in savoury dishes...but curries ,roasts,and fried rice all taste nice with some peaches added..Also you can stuff duck with peaches garlic and orange and it’s beautiful !

      That is something I did not think to mention as it has been awhile since I have done it but I have used my peach jams to make BBQ sauces or add some ginger to the jam and but it on a ham then roast it

    Was at the store yesterday and they had kimberly peaches on sale for 1.79lb! They are organic but I still baught about 25lb. Making a cobbler tonight with some homemade icecream and going to can the rest. Will also try the skin drying as well. Used to compost and feed to my chickens but I think my kids will love them! Great video! So much excellent info you have I'm trying to soak it all up. 🙏💐

    I like the idea of adding the juice to my kombucha for a second fermented soda. I have made jam medleys of different left over jams an jelly from canning, I hang on to them in the fridge. Berries go good with peaches. Ginger with pears and or lemons... Thank you Heidi🖐️☺️

    Nice video, Hedi! I just picked up 4 boxes of peaches yeterday. I was planning on gettng to them, but I had a sleepover with my grandson, minus the sleep, so after I proccessed my dairy I picked up, and got mostly through cleaning and organizing my pantry, I am spent! So I thought, let me watch some UA-cam on the best way to process these peatches, and get to them in the morning. I am excited to use my skins and pits to try the peach vinigar. What do you use your peach vinigar for? Also I think I want to try that peach butter to, that looks Yummy! Since I do not have rhubarb available, I will try a little lemon and see how that is. Thanks for the fun tips!

    Looks great, I love peaches. I don't know if I will get to can some peaches this year. But I plan on making some apple jelly and apple butter. Never had peach butter, I would like to know how that taste 😁 thanks for sharing Heidi ❣️ love the new ideas with the skins😎 pretty cool ❣️

    I like my can peaches to have a lot of the water, because I rarely make pies. I make those simple cobblers that have you pour the syrup over the top. So this works perfectly for me.

    I do a lot of crimsicals with fruit. I use any kind of fruit a banana, a couple Tbsps of yogurt, either milk or orange juice or any juice you like and put in plastic molds. Love them! If not too sweet use a bit of honey I don’t. I like just the fruit sweetness.

    Just planted peach trees in my yard this spring. Hoping in a couple of years to gets some peaches. I lived in zone 5a so the season is short. Not sure one of the 4 is standing the planting shock. The leaves are dying on it. Keeping my fingers crossed.

    I like making peach fruit leather with them as well as canning and making cobbler. I also made a peach pepper jelly we named “Polley Punch”. We gifted that to a few people but it’s always the first jam/jelly to fly off the shelves! Super good on crackers with a mild ricotta or farm cheese.
    I’ve been scared to death to try the Tattler lids due to all the horror stories I’ve read. You’ve inspired me to try though! Question about that; after they’ve cooled do you then remove the rings for storage?

    Raw pack requires some time for the peaches and syrup to meld. Once the melding is finished, the peaches fill up the jar.

      There are certain peaches that are best for canning because they stay firmer, like you though, I just can whatever I can get a good deal on. If they end up too mushy, then they are used for making more peach creamsicles through the year :D

    I’ve come to the conclusion that I’m only going to use the Tattler lids for water bath canning. I lost three 8 oz jars of mushrooms and a few other pressure canned jars this year. The seals cane undone a few weeks after canning.
    I may experiment with one or two jars occasionally when pressure canning, but loosing that much food is frustrating.

      I recommend you check out my video on how to use the Tattler lids. How you tighten the band is half the trick of getting it right, then remembering to tighten them down after removing from the canner

      Not near as much as a freeze dryer and I run my dehydrators off solar power most of the time

    oh, I didn't realize that the tattlers don't ping. I've had the dehydrator going in the same room as the canner and haven't heard all my pings. I've been using tattlers for half of my batches to get used to them and just in case I botched it. I've done some tattlers where I stopped tightening them when the jar spun as the instructions said on my lids, but they seemed to barely be on, so I also did some where I tightened another half to 3/4 turn beyond that. Both seeled, but the looser ones had really loose bands when I pulled them out of the canner, either way I tightened after they came out of the waterbath. So I've been doing the extra 3/4 turn and so far they've all been sealing. I'm doing a lot of relish in small jars so most of my batches have been 10 minute processing. I've been wondering if it's ok to waterbath 2 different recipies in the canner at the same time if they have the same processing time. I had a batch where afterwards the water had the color of turmeric, but all the jars sealed and looked full after the canning so it made me wonder if one recipe could effect another if I put multiples in the canner at the same time.

      One thing y ou have to be very careful of is over tightening, that is how I had a jar explode on me causing a second degree burn on my wrist. This happened because over tightening can cause too much pressure build up inside the jar. Yes, it is normal for the bands to be loose when you pull them out of the canner, thus the reason they need to be tightened down after removed. It is also normal for some contents to come out into the water when canning but I do not believe they would then seep into the other jars as the pressure is going outwards, not inwards. At least not until they start cooling.

      @@RainCountryHomestead I've noticed that some of my ball jars after they are cool, the lids are sealed but the band is loose like you dropped it on and didn't turn it at all. I've had one jar like that on almost every batch lately.
      I haven't pressure canned the tattlers yet, it shouldn't but the pressure canning scares me a bit.

    im still having problems finding jars in past i go thift store for but now during covid we are not going in public to much but im going to try my local hardware store so i can start my canning again ive done lots of canning but still want to do salsa tomato juice and peaches of course. i want a thredle machine so bad but hubby says to much for it says a electric one is good enough but im looking on market place for a used one but really want one like you have i also want to purchase a skirt from you but i cannot decide colors to ask you for i do wear lots of black and i want a crocheted sweater to match i crocheted a sweater its cute but not like yours

      I buy ugly citrus from the farmers market to slice and dehydrate. So good in hot teas and cold beverages when I don’t have fresh or just to save $!

    Do you have a preference in what kind of peaches you can? I was always told to get specific kinds but does that really matter?

      It only matters in the sense that certain ones stay more firm than others, however, I can whatever I can get for a good deal, especially if they are organic.

    What is your reasoning for getting out all the bubbles?

      If you do not remove as much of the air bubbles as possible, you will end up with a higher amount of air than you will want in the finished process leaving some of the product sticking out of the liquid. What will happen then is whatever is not covered will darken. This is not just MY reasoning, this is fact that is noted on canning sites and I have found out for myself when forgetting to remove the air bubbles

I have never had one crack, and they seal just fine. But online it says you shouldn't use them for those two reasons. I appreciate the response, and value all information you share.     I was going to ask you have you ever seen dried orka pods painted like santas they are cute i do but we really dont decorate with santa because he is not a real person and it gives children the hope of beleving in someone who is not real so we decorate with a birthday for jesus he is real and we can give hope

    Reminder: "canning" involves cans. Preserving in a jar is not "canning". Lets start a new trend. We can call it proper english. All we need to do is use proper English.

      Preserving in a jar was called canning before metal receptacles were even used for canning. So yes, it IS proper English if you read the history on it
