    We got 100 lbs. of peaches last month and canned all of them , 1/2 into sliced peaches in simple syrup and the rest into different jams ( Peach Jam , Peach/Jalapeno Jam , and Peach/Bourbon Jam ), Took us 6 days to finish it all. Now we are enjoying the fruits of out Labor.

    I just got 40 pounds of second peaches!! Canned up 14 quarts in a vanilla syrup and now about to try this salsa!! Thank you! Looks so good!

    I picked up some peaches as "seconds" recently, and tossed them all into the steam juicer for 4 quarts of peach juice that will be turned into peach syrup. Then with the peach pulp, I blizted that in the blender (minus the pits, of course) and spread it out onto fruit leather trays but instead of leather, I dehydrated until it was crispy (almost looks like stained glass) and made peach chips. First time doing both, and they were all a huge hit. Lots of fun ways to put up peaches :)

    My husband is Mexican and we love to toss the peach halves on a searing hot cast iron griddle before chopping. Gives such a delicious depth. Works with mango and pina salsa, too.

    My first canning memory is of peaches. How lucky I am to have had 2 generation of women in my life who canned. That's almost 100 years of experience. My first thought is scald and plunging into icy cold water. My belly was so full of peaches from eating and tasting. We used lemon juice or fruit fresh to keep the color from turning brown. Granny always saved the good ones for peach halves for peach sundaes.The seconds were for jam....and we sealed with wax. Such good memories.

    Rachel. I save the clean skins, put them in a crock along with the seed and cook them all day. I strain it and can peach juice to use later. I also do the same with apple skins and cores.

    Don’t tell because I don’t want the canning police showing up at my house but I canned my peaches with the skins on. First time in 45+ years of canning. I was told the skins would be tough and unappealing. Opened a jar this morning and you can’t even tell. Maybe it was the type but it worked for me. Also made peach/habanero glaze, runny jelly. Delicious on pork. Peach salsa, peach jam, and freeze dried are on my shelves.

    Rachel I feel your fatigue of canning days, especially in this horrendous heat we’re all having across the country. I processed all of my peaches a month ago, but I may pick some up at the farmer’s market to make the salsa! I’m making your onion jam tomorrow! Can’t wait!     Rachel the skins and bruises you trim off make great juice to make jelly. I've done two batches this year. The second one had a bit too must water so I added half a can of frozen orange juice. Delicious! I just dried my peaches and we're enjoying them that way.

    I got a huge box with about 30-40 pounds of gorgeous peaches as a gift. Used all the scraps and some of the seeds for an absolutely delicious syrup. It is probably my favorite thing.
    I have about 15 pounds of peaches in the freezer and I’m absolutely going to try this salsa.

    Last year I made peach-mango-jalapeno jam/jelly, it was a huge hit. the peaches and mangos were in bits, and I cooked the jalapenos in a syrup for the sugar to make it jelly, and strained the solids from the syrup so it's a sneaky heat. I made a double batch of around 24 jars in total, it's all gone and I am waiting on local peaches to be almost over ready, because that makes it sweeter so I dont have to add as much sugar

    Peach salsa sounds yummy. My daughter and her friend just made pear salsa and sauce. Cottage cheese and peaches sounds great. Can you tell I'm hungry. God bless.

    Make a small x with a knife on the bottom of the peach, boil for 1 min, drop into ice bath, skins start peeling themselves off by lifting from the fruit

    Tomorrow HH & I are heading over the pass to eastern Washington to buy 75 lbs of peaches, 50 lbs of nectarines & 25 lbs of Italian prunes. My adult daughters and I will be very busy putting fruit up for our families!

    I put up 9 quarts and 18 pints of peaches, along with 36 half pints of jam. It was my first time doing peaches. They came out great.

    Hi Rachel! I made peach salsa earlier this summer for the first time and you are right. It’s amazing on fish, chicken, pork, etc. if you are looking for something different to make with your frozen peaches, try a peach rhubarb pie or cobbler. I made one with my fresh peaches and rhubarb and it was amazing. I just swapped the strawberries out for peaches. I highly recommend trying it! Thanks for being my inspiration!     I think it’s easier to peal them like apples then to blanch them, you can also use the skins for juice if you have a juicer

    I put up 8 pts of peaches yesterday, have 7 qts in now plus 2 bushels still to process. Going to make the peach salsa and trying out making peach juice/jelly from the skins. Fun watching you while I’m elbow deep too. It’s a peach party day 🥳

    You can make peach nectar with the peaches that are too soft to can as slices.
    I steam juiced the pits and peels leftover plus some unpeeled, quartered peaches to make a very clear juice. I used the juice to make jelly and also canned some as plain juice. Yummy!

    i think it is called scalding when you put them in hot water for 30 seconds or so the slip the skins. Peaches were the first thing I ever canned all on my own way back when I was like 19. I would can them in halves. would get them at a little farm stand off of M-37 just south of Newaygo. the stand was called Nelson's I think. always did red havens

    Can't believe I missed this one when you posted it. Im going to make a batch of this salsa today. As I'm in the middle of processing my peaches this week. I've been putting the overripe bits and skins into a 1/2 gallon jar for making peach vinegar. I'm loving fruit vinegars. Learned about them from Rain Country. The pear vinegar I made last year is so delish! I also have a jar of blackberry vinegar fermenting right now.

    Love your channel! It’s my go to for canning guidance. I’ve water bath canned but this is my first year to pressure can. You inspired me to try it and I’m hooked. We had gotten away from gardening for a few years but back at it and I’m trying to preserve everything I can to feed my extended family. Thank you for sharing your ideas…I gain a lot of inspiration from you. I’m also new to raising chickens. I love it…don’t know why I waited so long.

    Looks delish! I love peaches. This year I did peach salsa, peach preserves and peach chutney for the Every Bit Counts Challenge. Maybe try the peach chutney on the peaches you froze, when you get a chance. Fabulous on meats or with cheese and crackers. Also, it's a slightly different flavor profile than other condiments I've seen you can. Love the channel. I'm looking forward to the rest of your preservation season!

      The salsa you had at a restaurant may have been made with fresh peaches. If it was, the canned version will be a different consistency and flavor.

    I picked four bushels of peaches from our tree. I gave a lot away to family and friends. I canned peaches made jam and for the first time I made corn peach salsa and we absolutely love it ! I will be adding that to the shelf every year now! I must admit I was really not sad to see the end of the bushel baskets!

    Oh you have to put those peach slices in your freeze dryer! They are my families favorite snack. I actually did a full bushel in the freeze dryer this year because they go sooooo fast. 😁

    I done the same, bought seconds and they was soft, to soft to can in slices. So I canned peach jam and used pealing and the peach that was left on the skins to make jelly ( I didn't blanch mine I just peeled them) and made peach butter with some of them.

    This is how I have canned my peaches also! Adding HOT water will melt the sugar and it will dissolve! Just watch that if you add cool water the sugar will make a clump!

      Try peach slices frozen in orange juice. Eat them still slightly frozen. It is very yummy too!

    Just spent last 3 days making peach jam for Christmas gifts. I make mine without pectin so it takes a lot longer on the stove but I prefer the results. Each day I made a batch and I peeled the peaches instead of blanching and cooked the peelings down in water until somewhat thickened. I did this at the end of each day and then squeezed them through cheesecloth. I ended up with 2 quarts so I just made peach jelly today with all the scraps. Never thought about making peach salsa but definitely going to try that.

    I freeze with a bit of sugar and use the meal saver to bag them up. When I want a taste of summer I take them out about 20 minutes before I want to eat them. I love them with a little iciness. I want to try peach salsa this year.

    Hope you got a good sleep after a long day! Peaches in a very light syrup are my favorite thing to can. I call them "Summer In A Jar!!" 😉While I'm canning them, I'm pretty sick of 'em but come Jan or Feb, they are a real treat to pull off the canning shelf!! (I only open the jars for special occasions!) Enjoy the rest of your end-of-season canning and thanks for sharing how you like to do things. It won't be long and the snow will be flying (northern WI here) and just think of all the meal options there will be, simply because you took the time now to plan ahead!👍 Enjoying your channel!     Another yummy thing I have done with peaches is to make a peach chutney with peppers/ onions etc. SOOO good. I had it on Sweet Potatoes. the flavor combination is amazing.

    You should put some slices in your freeze dryer. They are supposed to make awesome snacks.

    I flash freeze my peaches. I wash my peaches then place peach on sheet pan and freeze. Then place in large freezer bags once frozen.. When it's time to use peaches, I can run the frozen peaches under warm water and skins slide off. Then I will cut my peaches from the seed. Whether it be dicing them or cutting in slices. Quick and easy. Believe me, I've peeled my share of peaches in the day, but love this
    much easier way.

    Ball has a recipe for a Spiced Honey peach recipe. Good one to make a pie out of. I cut the amount of cloves in half.

    The squirrels didn't eat all our peaches last year, so I canned peach salsa, peach jelly, peach jam, and peach bbq sauce. This year we had a late frost that took all the blossoms.

    We love our canned peaches. I do 21 quarts of halves, and 3 batches of preserves and peach butter. I have to ration it for the next 11 months until next peach season.

    I didn't get to can any peaches this year. When they were available from the Mennonites in our area I was just getting over Covid. Didn't really feel like messing with them. I'm out of peach jelly and preserves for the next year. Oh well, we'll survive on apple and grape jelly and strawberry preserves.

    I got a half bushel of peaches, I think, this year. I canned them all up in halves to make my honey cinnamon peaches. My hubby and sons all love them. Great to cook up or just to crack a jar open to eat or dress up with a little whip cream.

    Going to make this salsa later today. Am going to use my canned peaches and just not put them into the "boil mix" until right at the end. Waiting on a Walmart delivery this afternoon as I had no sweet peppers or red onions and needed some more half pint jars.
    Oh, BTW my 2 little mini doxies heard yours whining in the background and are carrying on as they think a buddy is in distress lol. Looking forward to trying this!

    I made the peach salsa from the Ball book. It came out delicious! I also made peach BBQ sauce.

    Oh my goodness, might not been your recipe but i made plantey of it i think?? Peach salsa !! Mine i make it mild and i can eat it with everything. It's so good so good .

    There's lots of things you can make like peach nectar, peach jam, those are all good to do use the soft peaches for, peach salsa if they're firm enough you can do slices and put them in either water or a really light syrup depending on what your preference, I like doing mine and just water I have done this simple syrup but now that I'm trying to eat better I've cut that out and just do water, and can that way all are good and all I've done.
