Those little metal skewers are the type usually available at Thanksgiving for trussing a turkey. I have some in my utility drawer that have never been used, haha. I don't think I'll be making a beef heart any time soon however. You two are so brave!

I am really interested in this recipe you all are making. I think I would try this. I was hoping that it would taste more like chicken hearts or turkey hearts, which I certainly do eat.
We’ve never had poultry hearts (other than in thanksgiving gravy) so we can’t really report on how close this is. The BH&G Meat Book also suggests pounding the meat flat, preparing it like chicken fried steak and then cooking that low and slow for two hours in a little water. Hummmmm...not sure how that would turn out. Another comment or suggested wrapping the heart in bacon and then cooking it low and slow.
I love the variety meats. And I love how much fun you have with these videos. I think I’d have cooked it in my pressure cooker. I like meat to be well done but very tender.
Watching your action in the beginning of the video the way you’re nervous in regards to organs it’s quite funny. Now I have immigrated to Canada from Ireland and I know Canadians are very selective and fussy about what meats they even eat. Here in Alberta they mostly eat beef and chicken and some fish maybe like salmon or trout or lobsters and prawns but that’s about it. They wouldn’t consider really eating rabbit or goat mutton or lamb there are very few of them that will lead order fish. Of course I grew up in an island and I pretty much eat everything that comes out of the ocean. My grandfather used to go shooting so we would have things like rabbits and pheasants and squab. My father loved his Indian food and some African dishes so we had goat. Of course my mom love to cook up some lamb. But we also had organ meats to . My mom would make liver onions and gravy she would also make patties out of the liver we would have stuffed roast hearts. The heart meat the next day is absolutely delicious in sandwiches. Kidneys were quite strong so she put them into dishes like steak and kidney pie. Some of the more gamey meats we got well put in two sausages and pies. Here’s the thing organ meat is far superior and more nutritious than any other part of the animal. When the pride of lions kill an animal and the main line comes in he will eat the heart liver and kidneys while the rest of the pride eat everything else why because it’s the most nutritious part of the animal and a lot of people turn their nose up at it which I have to say he’s ignorant but I understand it’s also a social stigma. If you get good at preparing and cooking organ meats they truly are delicious it just takes a bit of practice LOL.

Another wonderful video! I love shopping at one particular Asian market close to us that has an outstanding butcher counter and seafood section. The cuts may be different than what my eye is accustomed to, but the prices are outstanding and everything is fresh. And WOW talk about produce! I had a feeling that your heart would be a bit on the chewy side since it was braised. No fat in that meat. I'm sure you found someplace to dispose of the remains, but just out of curiosity - do you ever repurpose something like this?
We did repurpose this and made it into pate’. Since pate’ is made from liver and the heart had a very liver quality we thought we would give it a try. We’ll taste test this weekend.
I think the shape of a "heart" is actually from when a woman bends over. Its the shape of her backside with legs crossed. It wish it was from the dissected heart!
Yes, I looked on wikipedia - it originated from the shape of the seeds of silphium plant which was used for conception, and also the shape of a woman's breasts, buttocks, and genitals.
Be respectful of the animal that gave up his life. all the meats you listed are excellent. I use to tell my kids that liver was steak, cause everyone likes steak.
Tastes like liver, dried out pot roast? Sounds like you overcooked it. I think heart lends itself better to a pan sauté and cooked medium. Best with a steak rub and sauce.
