I think it's cute that Uncle Roger brought he on stage for his comedy show on NY. Also the day old rice is something that so many people forget but it is so necessary for a really good crunch.
I like Esther, many good tips, and authentic way to do fried rice. At my hometown we also mix the liquid whole egg with the rice, so that they blended perfectly.
Yeah, it's certainly not a new thing using the whole egg. It's a slightly different texture as well, not sure which I prefer. I tend to swing between both methods.

I think it's kind of satirical; like it's bougie, restricts portion size, but it's also kinda metal, sort of a slap in a snob's face that there's just prawn heads jutting out, judging you back while you eat out of a crab's skull
I REdiscovered MSG after years of believing the rumors about its health risks and learning that there really isn't any health risk when used in moderation (just like regular salt), and I've officially fallen in love with this secret ingredient, it really kicks things up a notch and my fried rice tastes sooo much more like take-out with the MSG! Hey, I’m just saying what that guy meant since you clearly didn’t know.
The golden fried rice technique is actually one trick I learned for when you have to use fresh rice. I dunno if that's why Esther used it, but the fat coating prevents the grains from sticking together, especially important for Japanese and Korean varieties of rice. The method I use is one (whole) egg in the rice, the rest scrambled like normal.
I learned that technique thanks to watching the original Iron Chef.

I like Esther, many good tips, and authentic way to do fried rice. At my hometown we also mix the liquid whole egg with the rice, so that they blended perfectly.
Yeah, it's certainly not a new thing using the whole egg. It's a slightly different texture as well, not sure which I prefer. I tend to swing between both methods.

In the original video, Gabi calls her friend, a food scientist, who gives her the tip on plating. I think it's kind of satirical; like it's bougie, restricts portion size, but it's also kinda metal, sort of a slap in a snob's face that there's just prawn heads jutting out, judging you back while you eat out of a crab's skull

I REdiscovered MSG after years of believing the rumors about its health risks and learning that there really isn't any health risk when used in moderation (just like regular salt), and I've officially fallen in love with this secret ingredient, it really kicks things up a notch and my fried rice tastes sooo much more like take-out with the MSG!
