While the first shot has Vincenzo slicing the garlic, when he adds it into the wok, the garlic is properly chopped. I think Vincenzo just used a single scene of him slicing for editing the video. He still chopped it properly
Yah, but if you really want to chop it finely enough, you smash it with the side of the cleaver which does most of the work, and then you choppity chop the mash. You don't need to slice it in this context (though in other Chinese dishes, you might slice the garlic).
Still, it's pretty hilarious to peel the garlic first. SO much easier to smash it, then the skin comes right off and it's easier to mince. I don't understand why'd you'd do that in any style of cooking.
"Is that some Italian cooking technique or something?" Actually, it is! Frying the garlic in the oil infuses the oil with most of the garlic flavor, and the resulting garlic chips end up with a very mild, roasted garlic flavor that serves as a crunchy element in the final dish.
I love how the story of Auntie Helen keeps evolving over time. Here I was thinking she is such a terrible person, and now we find out that she's been locked in a fridge before. 2 sides to every story.
When I registered my new Zojirushi rice cooker I told them I got it because of you. I also told them they needed to sponsor you. Good luck with that and congrats on 4 Million.
A quick way to tell if this is a real chef or not by seeing if he is really respecting different cuisine cultures and willing to make efforts to do research to understand those cultures. Fusion doesn’t mean to twist things to just follow your own standard. That’s not chef. That’s money grasper. Looking from this way, Chef Gordon Ramsay & this Chef Vincenzo really earn the name of “A Chef”
Funny you mentioned it, because the second half of Vincenzos video, which Uncle Roger didn’t review, is him bastardizing the rice and making it as Italian as possible. Olive oil, tomatoes, cheese it was almost a risotto.
@@pomamoba You say this in a very misleading way. He was clearly having fun with it due to people fucking up Italian food, and later criticised many parts of the dish and said the original was better
I would argue that what differentiates a chef from a cook is the ability to develop and create cuisine rather than just follow existing recipes. If all you can do is emulate well but can't do anything original, that makes you a good cook but a worthless chef. That said, modern professionally trained chefs (especially "Anglo-Saxon" ones) tackle everything from the perspective of flavour theory and a more "scientific" understanding of technique, which means that more subtle cultural elements gets ignored. Gordon is as guilty of this as anyone else, just have a look at his abortion of a Carbonara video...

Just a quick note most places in Australia have only recently started selling the fancy fully enclosed rice cooker. The type used by vincenzo was the only one that most non asian Australians had access to.
Someone start a petition that this ricecooker brand sponsors uncle Rog. Im really certain their sales went up after showing this thing millions of times in his vid :D
My partner has agreed to splashing out for the baby elephant rice cooker. Only knew about the brand because of Uncle Roger... so they definitely should consider a sponsorship!
Vincenzo did a great job in his video and I loved how he popped uncle Rodger in there when he would make a joke on purpose, he also did a great job on the fried rice
Yeah but not with egg fried rice or for asian dishes. Uncle Roger has a point. You dont want to be slapped with a big slice of garlic while eating rice.
It'd work fine in egg fried rice. Uncle Roger does not have a point, other than it'd be less traditional. "Traditional" is not the only way. Only bad cooks (and ironically, Italians) think there is only one way to cook. I suspect the guy who plays Uncle Roger is well aware of that. Uncle Roger says you don't want to suddenly be hit in the face by garlic, but that is precisely the point of this method. Slicing the garlic thinly gives the dish a more subtle garlic flavour than if the garlic was minced. You slice it so you AREN'T hit in the face with garlic. The slices themselves are fairly mild once they have been crisped (think about how much milder a taste cooked onion is to raw onion, same thing) and they give you a nice bit of texture. Things like using a wok, using day old rice or not stir frying in olive oil...those have solid food science reasons for why it's done that way. Slicing garlic? That's just preference, like making it more or less spicy.
Everyone. Yes... My internal monologue watching that: "(More, more, more) how do you like it, how do you like it, (More, more, more) how do you like it, how do you like it." That said, the MSG and sesame oil were definitely excessive.
Omg I ruined a really nice meal my husband made with soy sauce. We did a taste test before plating and it was gorgeous. we plated it and husband put a dash of soy sauce while I was getting the kids to sit down. When I got my plate I put extra soy sauce because I didn't know it was already on there...turned a delicious meal into a salty plateful of food 🙄😂
You're so damn funny, dude. I came just across you with Vincenzo's carbonara challenge. "MSG is salt on crack. Inside is salt plus crack". Instant subscribe. You're right about that, and it's similar to crack. If you don't over-do it like other Americans like me tend to do things; it's safe. Just don't overdo it.
5:14 I was taking a sip of water and laughed. I choked on it so hard that the guy from the office next door came to see if I was ok and found me on tears. 🤣
This spatula is correct for normal asian home cooking. With the round ladle you really need skills like Chef Wang in order to flip the rice onto the ladle because its really awkward to take out the end result otherwise.
@@charliedovlander1269 Ok I know he was born in Malaysia but he sounds American when he does let his real voice be heard. I’m so confused. @@VanPham-lr9et Ok but is he actually American and just born in Malaysia or did he pick up the accent? That’s what I was asking. We have many South Korean exchange students that go to our local college for 4 years but they never picked up that American accent. I was just shocked hearing his real voice(not saying I automatically assumed he actually talked like this because I figured he was hamming it up for youtube) but that real voice threw me off big time because it’s so American versus a Malaysian accent. That’s why I was curious and am asking.
I’ve made Vincenzo’s salmon mascarpone pasta so many times it’s easy and great, one of my favorite food UA-camrs to actually cook his recipes along with Marion grasby and Chinese cooking demystified
Very happy to see this video, and it's antecedent video for a rational egg fried rice solution. I have tided up my own steps with tasty results very much surpassing my previous egg fried rice attempts. All credit goes to the two OG posters, thank you! Vincenzo "proves" that a basic traditional recipe is clearly superior, and worth adhering to without fiddling. And Uncle Roger helps sort through some maybe minor, maybe major, garnishing issues re soy et al. Plus the fact that too much rice, or too much anything, can overbalance the overall effort.] And balance is important here, as Uncle Roger has said many times, and I have taken it up as my own mantra. This may even be a good dish to prepare new i.e. young and starting cooks about proportional ingredients with a fairly complex but understandable taste mix and impact? Teach a 13 year old to cook this good fried rice consistently, and they will definitely carry some lessons into their cooking future. Whatever, I'm no chef, nor even a good cook...but seems useful as a teaching tool. Who knew? I usually add more veg...like a bell pepper...so that goes in after the garlic/onion to help leach out it's moisture. And I use whatever is on hand, so if there's no chili pepper, than gojuchang, or similar chili paste, is getting used. Same with every ingredient...no going to the store to find 1 ingredient, substitute from your pantry and move on! I also add dashes of soy/fish sauce/oyster sauce towards the end if dryness is detected. No MSG. Period. That is quite simply an unnecessary crutch, and one that literally causes me unrestful sleeps following its ingestion. If you want to simulate the MSG effect without actually buying MSG, just add a crushed bouillon cube, or a salt infused herb mix from a shaker, or something like Vegeta, Croatia's popular substitute for MSG. It's all just salty+ flavour, at least in my opinion, that is easily subbed with things on hand.
If there's one thing I learned from my old Italian chef friend, it was always bigger is better 🤣 very generous with ingredients and portions! I miss Uncle Dennis, he was a great teacher for Italian cooking.

this guys just makes us so entertained with his reactions not like any other youtubers! really entertaining.
this guys reacting just makes my day
10:08 Italians just can’t control themselves when it comes to adding sauce 😏
Just a quick note most places in Australia have only recently started selling the fancy fully enclosed rice cooker. The type used by vincenzo was the only one that most non asian Australians had access to.
move country!
My mum has a older version of Vincenzo's rice cooker and it has lasted for some good 10-15 years XDD
@@lieutenantpepper2734 i did just say that the nice ones are becoming more widely available here. I got one last weekend from aldi
Lol alot of people staying in Malaysia is using Vincenzo's rice cooker as well 🤣
The cheap one works. Cooker's a cooker. No need to be expensive.
Vincenzo's egg fried rice looked pretty tasty, but all that soy sauce and MSG makes me think it'd be salty as all hell.
Eat It with 3l of water
dude trust this rice gotta be salty af
It probably was but sooo was rogers carbonara
100% All that msg n pecrino
I think thats why he put soo much to take the piss
everything was good until the soy sauce, sesame oil, and msg, the colour of the fried rice is good tho, but gonna be soooooo salty
Dont forget the rice itself is cooked with chicken stock so + slatiness there

Someone start a petition that this ricecooker brand sponsors uncle Rog. Im really certain their sales went up after showing this thing millions of times in his vid :D
Asians purchase them regardless...
@@jeloyloy2001 So you are saying only asians buy ricecooker ? Did you ever try cooking rice with one?
I bought one recently, quite sure it's because of watching too much Uncle Roger. haha. could've chosen other brands!

I love how vicenzo's voice tone sounded like he really wanted to offend uncle roger
stewie what u doin here?
This guy right here always makes my day even better!!! Uncle Roger!!!
When the garlic went in the wok, it looked properly minced, but he didn't show it being chopped that way.
6:15 Yes the thin slices is an Italian thing. You do it when you are trying to infuse olive oil with garlic for things like aglio e olio.
Everyone watching him use soy sauce: ok... hmmm... that’s quite generous.... wait.... WAIT.... NO... STOPP... STOOOOOPPPPPP
Everyone. Yes...
My internal monologue watching that: "(More, more, more) how do you like it, how do you like it, (More, more, more) how do you like it, how do you like it."
That said, the MSG and sesame oil were definitely excessive.
Weencenzo good at beginning, but last moment soy sauce too mach, he fak ap.
THAT’S ENOUGH SLICES
Yes... I think other mistake was acceptable coz still can eat but the extra soy sauce Make it to salty & cannot eat.
I am learning so much about how to make Egg Fried Rice, so please do more reviews on Egg Fried Rice!!!
I like when Uncle Roger says "sorry children" in a very different accent
It's like a cameo from Nigel!
“Anyone who roast Jamie Oliver automatically get entry to heaven!” Had me dying 😂

I love whenever uncle Roger breaks character it seriously makes me laugh harder than whatever he said 😂
No
Uncle Roger on that cloud looks like Goku on the flying Nimbus.
Exactly what I thought.
all I could think was Hotoke from Yuusha Yoshihiko. All he needs is a cheesy fake rubber buddha head with long earlobes.
Goku also always wears orange lmao
Ps uncle roger you can send one of those rice cookers my way😉
When he said "Sorry, children" in his real accent and tone, my heart skipped a beat-
His real voice is sexy
He does that in every video. Ruins it for me , breaking character
@@charliedovlander1269 Ok I know he was born in Malaysia but he sounds American when he does let his real voice be heard. I’m so confused. Like is his parents American(as in military brat) and he just happened to be born there or has he been exposed for so long he just picked the accent which once again to me it sounds American?!?! I generally want to know.
@@sarahprince2412 He went to Northwestern in Evanston, IL
@@VanPham-lr9et Ok but is he actually American and just born in Malaysia or did he pick up the accent? That’s what I was asking. We have many South Korean exchange students that go to our local college for 4 years but they never picked up that American accent. I was just shocked hearing his real voice(not saying I automatically assumed he actually talked like this because I figured he was hamming it up for youtube) but that real voice threw me off big time because it’s so American versus a Malaysian accent. That’s why I was curious and am asking.
Did anyone else notice that Uncle Roger lip-synced to his edited appearance of himself at 5:07? 😂
I’ve made Vincenzo’s salmon mascarpone pasta so many times it’s easy and great, one of my favorite food UA-camrs to actually cook his recipes along with Marion grasby and Chinese cooking demystified
5:07 great timing🤣🤣
Is it just me who loves seeing Uncle Roger laugh in the outtakes
We all like it captain obvious because that's the point of outtakes 😄
oh no no no look how many people liked your comment
Yes, yes...you're the first person ever to laugh at outtakes. They've been a thing for decades for no other reason than to please you.
Plus the fact that too much rice, or too much anything, can overbalance the overall effort.]
And balance is important here, as Uncle Roger has said many times, and I have taken it up as my own mantra.
I really love you put K-pop clips into your UA-cam videos time to time haha
plz make more vids i love them
You are a legend among legends

My brother said why is he touching that rice like a married man touches his wife’s boob and now that all I can think about
Yes... Soy sauce and sesame oil are important, but if you put too much it's the only thing it's going to taste like.
