    It seems roasted cauliflower would be great with this sauce …and less expensive.
    Or eggplant or less expensive mushroom.

      For sure, or tofu would work as well. But none can match the flavor and texture of the mushrooms. Seriously better than chicken. Find them inexpensive at an Asian grocery store :)

    Here in Germany we also like to call the oyster mushroom the veal mushroom. Simply a wonderful mushroom!

    Omg, we just made this last night and it was sooo delicious!! Thank you! Also made the collard greens and they were better than any other I've ever had, usually made with meat. These, so much better!

    When olive oil get heated above a certain point it becomes toxic to the body where as coconut oil doesn't.
    Cannot wait to try this it looks SO yummy!!

      That's true, I try to only use coconut oil for sautés and general roasting. I think the coconut oil is fine in this recipe, but I usually don't want the flavor. Do you use refined?

      International or farmer's markets are great places to look for the big ones! Plus, they're usually a little cheaper at an international market

    Why did you wipe the mushrooms instead of rising in water?
    Any reasons?

      I wipe them instead of rinsing so they don't soak up water!

    They think the glyphosate aka round up on the wheat is causing everyone to become sensitive. In the 90’s they started to heavily use it and since then gluten allergies have become a thing.

    Looks good but please peel the ginger...Its soft skin absorbs lots of unclean things. Scrape up with a spoon is all.

    great recipie i am.sure but i feel alot of you folk doing recipies especially vegan but not only are unrealistic with what the average person can do money wise , in my area these mushrooms are 15.99 a pound , not realistic for the average working person

      I totally understand, and know that not everyone has access to the same ingredients. I wish I could change that! But the more education we have on healthy eating and vegan cooking, the more those foods will become accessible to all. If you live near a city, you can always check an international or Asian grocery store; produce/mushrooms are usually significantly less expensive. Or, experiment and grow your own mushrooms!

      I would advise checking an Asian grocery store for the mushrooms. They are substantially cheaper there. (Like I can get a 3lb tub of them for 5 bucks at Hmart). Also you can totally make this recipe with pressed tofu (which I have done several times when I couldn't get to the store to buy mushrooms), and it is still delicious.

      @@SweetPotatoSoul, a Filipina friend introduced me to the concept of using dried shiitake, lions mane, and oyster mushrooms as meat alternatives. I now buy dried mushrooms by the pound, a am looking forward to rehydrating a handful of dried oyster shrooms for this recipe. I buy online from Forest Mushrooms. We’re lucky that our organic grocery offers affordable fresh oyster, lions mane, etc from three different local growers, but having a constant nonperishable supply is 👍🏾👍🏾👍🏾

    This looks delicious, however, I think its misleading to call this 'anti-inflammatory' given the first two ingredients listed - onions and garlic - are known inflammatories. This is especially true for those who suffer from gastrointestinal issues such as Crohn's Disease, IBS etc. You can replace it of course with chives and garlic-infused oil since garlic is water soluble and doesn't transfer the hard-to-digest materials this way. Hope this is helpful for any folks who have IBS like me :) and of course @SweetPotatoSoul thanks for the recipe as well as the amazing effort put in as always.
