  • Palak Millets Khichdi Recipe :
    Ingredients:
    - Kodo millets: 1/4 cup
    - Yellow moong dal: 1/4 cup
    - Spinach: 1 bunch
    - Ghee: 1/2 cup
    - Cumin seeds: 1 tsp
    - Ginger: 1 tbsp (plus 1/2 tsp for blanching)
    - Garlic: 1 tbsp (plus 2 cloves for blanching)
    - Garlic pieces: 1 tsp
    - Onion: 1/4 cup, chopped
    - Black pepper: 1/2 tsp
    - Turmeric powder: 1/2 tsp
    - Cumin powder: 1 tsp
    - Salt: 1 tsp
    - Green chilli: 2 (optional, for blanching)
    Method:
    First Step:
    1. Wash Kodo millets several times and soak them for 6 hours.
    2. Wash yellow moong dal and soak for 1 hour.
    3. In a cooker, add the soaked dal, millets, salt, turmeric powder, and 2 cups of water (for 1 cup of dal and millets).
    4. Cook until 4 whistles are heard. Set aside.
    Second Step:
    1. Clean the spinach leaves, remove extra stems, and blanch in water with 2 green chillies, 1/2 tsp ginger, 2 cloves of garlic, cumin seeds, and salt.
    2. Boil for 2 minutes and strain.
    3. Transfer the spinach to a bowl of ice water to retain the color.
    4. Squeeze out the extra water and grind to a smooth paste in a mixer jar.
    Third Step:
    1. Heat a pan and add ghee.
    2. Add cumin seeds, ginger, garlic paste, and chopped onion. Sauté until brown.
    3. Add the spinach puree and sauté well. Add green chilli if desired for spiciness.
    4. Finally, add the cooked dal and millets, adjusting the water consistency.
    5. Add cumin powder and black pepper, cooking for 1 minute until well combined.
    6. Turn off the heat.
    Tempering:
    1. In a small pan, heat ghee and add cumin seeds and chopped garlic.
    2. Pour this tempering over the Palak Millets Khichdi.
    Your healthy and tasty Palak Millets Khichdi is ready! Serve with curd, pickle, and papad. Enjoy a healthy meal!
