Serves: 5-6 people
Ingredients:
Soaking & Grinding
RICE | चावल 1 CUP
CHANA DAL | चना दाल 1/2 CUP
TUR DAL | तुअर दाल 1/4 CUP
URAD DAL | उरद दल 1/4 CUP
FENUGREEK SEEDS | मेथी के बीज 1/4 TSP
CURD | दही 1/3 CUP (SOUR)
WATER | पानी 1 CUP
Batter
BOTTLE GOURD | लौकी 1/2 NO.
CARROT | गाजर 1 NO.
ROASTED PEANUTS | भुनी हुई मूंगफली 2-3 TBSP (ROUGHLY CHOPPED)
GREEN CHILLI | हरी मिर्च 4 NOS.
GINGER | अदरक 3 INCH
FRESH CORIANDER | हरा धनिया A HANDFUL (ROUGHLY CHOPPED)
ASAFOETIDA | हींग 1/2 TSP
SUGAR | शक्कर 1 TBSP
SALT | नमक TO TASTE
TURMERIC POWDER | हल्दी पाउडर 1/2 TSP
GROUNDNUT OIL | मूंगफली का तेल 2 TSP
WATER | PAANI 1/4 CUP OR AS REQUIRED
Tempering & Final Cooking
PEANUT OIL | मूंगफली का तेल 2-3 TBSP
MUSTARD SEEDS | राई 1 TSP
CUMIN SEEDS | जीरा 1 TSP
WHITE SESAME SEEDS | सफेद तिल 1 TSP
CURRY LEAVES | कड़ी पत्ता 8-10 NOS
Method:
Add the rice & all the dals into a large bowl & wash them until the added water turns clear then add the fenugreek seeds & let them soak for 5-6 hours or overnight.
Once soaked discard the water.
In a separate bowl mix the sour curd & water, then add the soaked dal & rice mixture into a mixer grinder jar, add the prepared buttermilk & grind it into a semi-fine paste, the batter should feel like fine semolina then pressed between the fingers.
Transfer the batter into a large bowl & whisk is for a few minutes, then cover & place it in a warm place to ferment for 10-12 hours (the batter should ferment in 6-8 hours during summer).
Once ferment mix the batter gently & add the grated bottle gourd, carrot & all the remaining ingredients of the batter, add water as required to adjust the consistency of the batter, it should not be too thick not too thin, it should be like idli batter.
To cook the handvo you will need a thick bottomed vessel or a non-stick pan.
Take 3 ladle full of the batter into a separate bowl & add baking soda into it & mix well.
Set the kadhai over high heat and once it gets hot, add the oil & let the oil heat up as well.
Further add all the ingredients of the tempering then pour the batter into the kadhai, cover & cook over low flame for 8 minutes.
Flip the handvo carefully after 8 minutes & cook from the other side for 4-5 minutes.
Your delicious & healthy handvo is ready.
Green chutney
Ingredients:
FRESH CORIANDER | हरा धनिया 1 CUP
MINT | पुदीना ½ CUP
GREEN CHILLI | हरी मिर्च 2-3 NOS.
GINGER | अदरक ½ INCH
GATHIYA | गाठिया 2-3 TBSP
CUMIN SEEDS | जीरा 1 TSP
SUGAR | शक्कर 1 TBSP
LEMON JUICE | नींबू का रस OF A LEMON
SALT | नमक TO TASTE
ICE CUBE | बर्फ 1 NO.
WATER | पानी AS REQUIRED
Method:
Add all the ingredients in a mixer grinder jar & grind it into a fine chutney, add very little water, this chutney needs to be thick in consistency.
Your green chutney is ready.

Authentic gujrati recipe to hai but ......
Sanjyot ji ....Handwa ko log kisi bhi tarike se paka lete hai , but isko authentic tarike se ret par hi pakana chahiye kyuki taste me zamin aasman ka ( pulao - biryani jaisa)fark aa jata hai.
Iska special cooker aata hai, bina siti wala. Jisme niche choti si tray raheti hai jisme ret bharni hoti hai. Gas ki flame par pahele ret wali tray rakh kar upar Handwa wala cooker rakhte hai. Fir ekdum law aanch par pone ghante tak pakate hai. Tab aata hai asli authentic Handwa ka taste. Kisi bhi bartan me, microwave me log paka lete hai yeh dekh kar thoda dukh hota hai, kyuki pura taste ruine ho jata hai ☹️
In South India we prepare a dish with this batter of rice and lentils,,,,we add onions ,methi leaves,green chillies, ginger,coriander leaves n curry leaves,,,,we pour like dosa on tawa and it is called "ADAI". Tastes yummy

I'm a Gujarati...Sanjyotji i love your recipes and I've tried a lot of your recipes...wanted to share a lil different recipe of handvo....we soak dal n rice for 6 to 7 hours then we grind them together using khatta dahi...then we add lil of coarse wheat flour in to it and add jeggory in it (not sugar) which boosts the fermentation in it and then keep it in a warm place. And we also make sure to put methi leaves along with veggies.... putting coarse wheat flour and methi leaves makes it whole meal that is dal, rice ,roti ,subji. That makes it more like a meal.
If people want a gluten free recipe, then they don’t add wheat. There’s already rice in there which is a grain so it’s already a complete meal

We don't ferment batter, no curd , fruit salt. Urad and methi is added to it...

Thanks a million! I am Gujarati and I make handvo using handvo maker almost every week. 11:16 Actually I live in Maryland, winter here is very harsh. I had Indian gas stove in my garage, so if I have to make handvo, with handvo maker, I have to use my stove in garage. It’s not fun to make it in winter, so I wanted try your recipe. I was very nervous and with so many doubts in my head I tried it and it turned out better than handvo maker. It was out of this world. All your recipes are always worth trying it. I have also tried idli, pav bhaji, Bombay sandwich. They are awesome.

I make handvo in appam kadai. It comes out well. The recipe given by you looks delicious. Will try this
In my childhood we had some aluminum special vessel for making Handvo. I used to get black pebbles like sand used in building construction and put it in that special handvo making vessel's center area. The height size of handvo in that vessel used to give cake like height.
Whenever I eat Handvo now , it evokes that memory.

Alternatively, we keep handva flour at home by dry grinding the rice & dals (like dhokla flour) & then follow the same receipe (add curd & then ferment)

You can use even cooked rice for fast fermentation in winter. You can also bake it in oven in cake mold.
