I'm a Gujarati...Sanjyotji i love your recipes and I've tried a lot of your recipes...wanted to share a lil different recipe of handvo....we soak dal n rice for 6 to 7 hours then we grind them together using khatta dahi...then we add lil of coarse wheat flour in to it and add jeggory in it (not sugar) which boosts the fermentation in it and then keep it in a warm place. And we also make sure to put methi leaves along with veggies.... putting coarse wheat flour and methi leaves makes it whole meal that is dal, rice ,roti ,subji. That makes it more like a meal.
I live in Sweden. My colleague really like Indian cuisine. Recently I prepared Biryani, they loved it. They demanded and requested you to create videos in English so that they can also cook and enjoy Indian cuisine.. you are the best.. thank you

Fir ekdum law aanch par pone ghante tak pakate hai. Tab aata hai asli authentic Handwa ka taste. Kisi bhi bartan me, microwave me log paka lete hai yeh dekh kar thoda dukh hota hai, kyuki pura taste ruine ho jata hai ☹️
Thanks a million! I am Gujarati and I make handvo using handvo maker almost every week. 11:16 Actually I live in Maryland, winter here is very harsh. I had Indian gas stove in my garage, so if I have to make handvo, with handvo maker, I have to use my stove in garage. It’s not fun to make it in winter, so I wanted try your recipe. I was very nervous and with so many doubts in my head I tried it and it turned out better than handvo maker. It was out of this world. All your recipes are always worth trying it. I have also tried idli, pav bhaji, Bombay sandwich. They are awesome.

Wow.. you have nailed the recipe. Alternatively, we keep handva flour at home by dry grinding the rice & dals (like dhokla flour) & then follow the same receipe (add curd & then ferment)

I am a South Indian, we make a recipe called adai which has the same ingredients and grind the rice dal with red and green chilli's Kari patta etc and grind like rawa batter ferment it. We don't add vegetables except onion or without onion. We cook it in dosa tawa. It tastes amazing
While watching this video I thought of our south Indian Adai, main ingredients are same/ similar, nowadays I add finely chopped greens like spinach/ methi leaves/ morninga( drumstick leaves) to the batter. So happy to connect with you on similar thought. Best wishes

In South India we prepare a dish with this batter of rice and lentils,,,,we add onions ,methi leaves,green chillies, ginger,coriander leaves n curry leaves,,,,we pour like dosa on tawa and it is called "ADAI". Tastes yummy

In my childhood we had some aluminum special vessel for making Handvo. I used to get black pebbles like sand used in building construction and put it in that special handvo making vessel's center area. The height size of handvo in that vessel used to give cake like height. Whenever I eat Handvo now , it evokes that memory. By the way, your receipe and videography looks great.
I make some of your recipes and they come out perfectly! Handvo looks like has same batter as the Adai batter made in South india. They make idli with it too, there are other versions of it to make Ponganalu with the same batter apart from dosa version of it. Adai is usually not fermented but some of us do. In andhra we make with only Urad and rice to make Minapa rotti ( has more urad compared to idli or dosa batter) Made exact way as Handvo with onions, green chillies and tomatoes, no extra spices added.

If people want a gluten free recipe, then they don’t add wheat. There’s already rice in there which is a grain so it’s already a complete meal

In my childhood we had some aluminum special vessel for making Handvo. I used to get black pebbles like sand used in building construction and put it in that special handvo making vessel's center area. The height size of handvo in that vessel used to give cake like height.
Whenever I eat Handvo now , it evokes that memory.

I make some of your recipes and they come out perfectly!
Handvo looks like has same batter as the Adai batter made in South india. They make idli with it too, there are other versions of it to make Ponganalu with the same batter apart from dosa version of it. Adai is usually not fermented but some of us do.
In andhra we make with only Urad and rice to make Minapa rotti ( has more urad compared to idli or dosa batter) Made exact way as Handvo with onions, green chillies and tomatoes, no extra spices added.
