### Khaman Dokla
*Ingredients:*
- *For the Dokla:*
- Bell peppers (capsicum) - 6
- Besan (gram flour) - 1½ cups
- Salt - 1 tsp
- Sugar - 1 tbsp
- Oil - 1 tbsp
- Lemon juice - 1 tbsp
- Green chili paste - 1 tbsp
- Eno fruit salt - 1 packet
- *For the Tadka:*
- Oil - 1 tbsp
- Mustard seeds - 1 tsp
- White sesame seeds - 1 tbsp
- Green chilies - 5, slit
- Curry leaves - a few
- Sugar - 1 tbsp
- Salt - ½ tsp
- Water - ½ cup
*Method:*
1. *Prepare the Batter:*
- Sieve the besan in a bowl.
- Add salt, sugar, oil, lemon juice, and green chili paste. Gradually whisk in water to form a smooth batter.
- Just before steaming, add the Eno packet mixed with a little lukewarm water. Whisk well to incorporate.
2. *Prepare the Bell Peppers:*
- Grease a steaming strainer.
- Cut the tops off the bell peppers and remove the seeds.
- Place the bell peppers upright in the strainer, making a cavity inside.
3. *Steam the Dokla:*
- Pour the dokla batter into each bell pepper until they are about three-quarters full.
- Steam for 20 minutes or until a toothpick inserted comes out clean.
4. *Cool and Cut:*
- Once cooked, let the dokla cool . Cut into pieces.
5. *Prepare the Tadka:*
- In a pan, heat oil and add mustard seeds. Once they splutter, add sesame seeds, slit green chilies, curry leaves, salt, and sugar.
- Pour in ½ cup of water and bring it to a boil to melt the sugar.
6. *Serve:*
- Drizzle the prepared tadka over the Capcicum dokla pieces.
- Enjoy this delicious twist on a classic Gujarati snack with friends and family!
