I'm an American, so I grew up eating lemon bars. They're one of my favorites because I love lemon. But it's bizarre that you added coconut to the shortbread crust. That's not authentic.
I know a good recipe for a similar slice but it's not healthy. It's a baked base, using flour and almond meal which changes the texture of the base.....then a mix of condensed milk with lemon juice and gelatin....let that set....then lemon flavoured jelly crystals mixed with gelatin as the last layer. I'm not a sweet tooth at all and I can eat this, though not a lot. It's so refreshing though.
@@sadypack the curd turned out great, but if your in a hot climate it's gonna be a bit taxing on your patience, especially while fasting😅. I wasn't successful with short bread tho. I substituted the butter with ghee. It was delicious but not how it turned out in the video. Do not try it with oil! Does not work.
Before you make these here's a couple things to watch out for: the recipe on the website is INCOMPLETE. Some of the ingredients used in the video aren't even in the recipe (lemon zest, salt). The method for making the lemon curd is extremely vague and leaves out some important details, the order is all wrong compared to the video. The amount of sugar in both the curd and base are overwhelming. Don't be afraid to cut down on it by a quarter or more. The end result was very rich but with sugar amount adjustments also quite nice! TLDR: there is nothing more annoying that having to rewatch video over and over again while baking because written down recipe is completely unreliable.
We have a version of this in New Zealand called Lemon Delicious slice that magically separated into three distinct layers (base, curd, meringue-type topping). My favourite slice, and now I must make some.

Hey i made this today! I followed every steps you told and it turned out great. The texture was perfect, the custard didnt fall off, and it could be cut very neatly. However I've never tasted a lemon bar before so when I first ate the one I made I didnt expect it to be very tangy, was it supposed to be like that? Maybe next time I will add a little more sugar because this one was a bit too tangy for me. (i didnt get to taste when i cooked this because i cooked it while fasting) But overall this was a great recipe, and the coconut you added for the base really enrich the texture. Thanks!
Do you think I could replace the dessicated coconut for some almond flour in the biscuit base? Also, if I was using limes instead of lemons, how many tablespoons of juice would I need? Thanks!
I'm an American who has been eating and making these lemon bars for more than 50 years. I've never seen a recipe for lemon bars that contains coconut except Donal's. It's not authentic. Yes, you can leave the coconut out of it. In fact, in the US we make something like a simple Scottish shortbread for the crust (flour, salt, sugar, and butter). No coconut at all.

Hi Donal! I love your videos and I knew I had to try this out today. But I had a slight issue with the lemon curd :( Everything was going good until I added the flour in at the end and it just got clumpy with the flour bits. I am not sure why but I tried to sieve the curd out to salvage it. I baked it but the the flour bits were still visible when it got out of the oven.
Not Donal, but you probably should mix the dry ingredients together first and slowly add in the liquid ingredients while stirring continuously (and gently). Some people prefer to sift their flour (especially if it's not newly opened) into liquid mixture, and it seems to have less issue with flour clumps.

The cornflour in the video looks like cornstarch. Should I be using actual cornflour or cornstarch. I'm in the US so I'm not sure if the names are different
I tried the recipe and they came out ok. It lacked the punch of lemon I usually expect from lemon bars. I noticed the recipe that while adding salt is mentioned in the method, it is not listed as an ingredient. I admittedly forwent this step because I didn't want to add too much. I'm assuming it was a pinch of salt. The curd came out very nice but I wonder whether the amount of corn flour (corn starch in the US) and flour in the curd may have hidden the lemon flavor a bit.

Yes tamp is a word, you tamp an espresso grounds into a gasket for example.

I think I may have made my curd too hot because when I poured the batter onto the crust it was like a jello :/ but they taste amazing!
