Everyone seems to enjoy the combination of a buttery crisp shortbread topped with a tangy lemon filling. The lemon filling actually separates into two layers as it bakes, so you have a thin cake-like crust with a soft and creamy lemon filling underneath. Lemon Bars, also called Lemon Squares or Lemon Slices, are instantly recognizable because of their liberal coating of snowy white powdered sugar. They are wonderfully addictive.

This video is an updated and more comprehensive version of the video that was shot in 2011. I plan to re-shoot many of the older videos based on new experience and feedback over the years. The new videos will also cover more information than was covered in the original video. In addition UA-cam does not feature very old videos and we feel our new subscribers should be able to learn these classic recipes as they are so good.

Thank you for your video. When I was young(age 16) ,I saw your classic lemon bar recipes and I made it! I felt interest about pastry. After that time, I chose my major pastry&baking, and now Im going to work at hotel.

I made them as stated and found the bars to be too thin. So I increased the recipe by 1.5 the next time and it was perfect. Immediately afterwards I found your recipe for lemon shortbread bars which is the same recipe doubled and baked in a 9* 13 pan. Next time I’ll try that. Thanks for all yous amazing recipes

I've done your lemon bar recipe and it came out AMAZING!! Now I'm wanting some more lol. I love how you redo your old recipes so we can see how they have updated especially after so many yrs. It gives us insite on what might have changed or we could discover something new.

A perennial favorite and so easy to make. They are always a hit at work or gatherings. I tried a lime variant one time too which was also great. I've taken to using the food processor for mine. I make the crust and then also use the processor to make the filling when the crust is almost ready.

You’re so awesome! I’ve learned to only follow your recipes because they come out the best. I love how you make different videos of the same recipe just in different quantities that way I can choose if I want a big batch of something or smaller makes my life easier! I had some leftover lemon curd and leftover pastry dough so I made some tarts. I had no idea if the curd could be baked, but it came out really yummy. Do you have any suggestions for lemon curd in other baked desserts?

Thanks, I just use the house brand foil from BJs. I'm sure Costco foil is the same.

Would it be weird if I substituted your lemon bar filling with your lemon meringue custard recipe? I guess that way I wouldn't even have to bake it? Therefore only needing to bake the shortbread maybe a little longer.

I don’t know how these comments are checked but my eggs, sugar and lemon juice took over 3 x’s the 10 min you mentioned. I was afraid to turn up the heat so I kept it at a simmer. After 30mins of stirring I gave up, took it off the heat, added the butter and zest but it never seemed to coat the spoon. Any ideas of what I was doing wrong? Thanks for your help.
Which recipe are you referring to? Because for this recipe you don't cook the lemon filling on the stove, you just mix all the filling ingredients together and then bake it.

My oven works the up and lower separate,so when finishing the crust after that when putting the filling what shall I do?turn the up only or the lower?
You should only use the lower heating element not the top.

I have a huge issue, my filling turned runny and the filling ended up on the bottom rather than top
It sounds like they weren’t baked long enough. You need to bake them until the filling is set. That is, when you gently shake the pan, the filling doesn’t jiggle. You could try placing them in the refrigerator to set the filling.

Thanks for this recipe. I made it with 20% less sugar for the seniors at my church; they loved it! I also made these for my coworkers (with 10% less sugar); everyone loved them including a colleague who doesn't like citrus food that much. These squares are so easy to make but they taste so good. I tried the lemon bars today, but most of the fillings go under the bottom, i have no idea what i did wrong? i did reduce the sugar to 150g that was sweet enough, love the taste ,thanks for the recipe will try again .
When you made the filling was it the same thickness as mine? If you reduced the sugar, that may have been the problem. You could try adding a bit more flour to the filling.
I just tried this recipe yesterday and the crust turned out beautifully. Super buttery and crumbly. I would suggest butter the foil and dust it because the bar tend to stick still. I did alter the filling to suit my taste. I triple the lemon juice and zest. Added one more egg and 1.5 tbsp of corn starch and added vanilla extract. Turned out so well. Very delicious
I can’t understand why many don’t use the zest to their lemon bars. Night and day difference. Also I once used Meyer lemons and never again. The lemon flavor was too diminished.

When I was in Jr. High which they call it middle school now, our Food's class Teacher taught us this recipe n I loved them ever since way back when n this sounds like the same recipe . N our teacher said alway's use fresh lemon never the bottle stuff itskes a real difference in the recipe. Ty for sharing this with us can't wait to try these... 😊

This was absolutely delicious! The crust itself is to die for, and I will be using it for other desserts! The lemon mixture was the perfect balance of sweet & tart. Thank you! Edit: I did use more lemon, only because I had a few extra lemons and I wanted to use them up!

I never had it before n when I took it out the oven I pressed the middle thinking like a cake it will press down n it came out on my fingers n I licked my fingers Ooooo it was yummy n I thought I better dust with powdered sugar before anyone saw it... couldn't wait to eat it... everyone loved it n wanted more... but I'm going to try your other bars.. I've done your carrot cake n chocolate n I don't try any other recipe

I've seen people blitz the lemon zest and sugar in a food processor to better distribute the zest and extract those flavor packed oils.
I do so love your recipes! What I find important when baking lemon bars is to make sure you make a sort of lip around the edge of the crust to keep the filling from sinking to the bottom which is a nightmare if it’s ever happened to you 😂😩...that will prevent that from happening. Your lemon bars like everything else are perfection Stephanie, thanks for all your hard work!...;)
Well I saw your lemon bars video today . I loved it I’m surely going to try it. . In india these lemons are not locally available, we get the small round ones. So maybe I will have to try it out and see how best it turns out will keep u updated👍🏼

I've never tried this in a microwave so I couldn't say how well it would work.
Love your videos 💕I always wash lemons with baking soda and rinse them with hot water. Its much better when washing liquid. 😊

hi i try baking this lemon sqare but after pouring the lemon filling into the shortbread crust and baked.after baking the lemon filling is different fr what i see in your video.my filling look pale in colour not yellow.and after bake the texture abit hard.may i know why is it so?
The color of the filling will depend on the color of your egg yolks. If the filling was too firm, maybe they were over baked.
Can I double this recipe and use a 13 X 9” pan? I am making for a party and have a feeling I will need double the amount:-)

You do realize you have 2 different recipes for the same product. Confused the hell out of me. So which one is it ?
Yes, I have two recipes. This one is baked in an 8 inch pan. The other recipe is baked in a 9 x 13 inch pan with a thicker layer of filling.
Can I half the recipe f i want to bake these in a 5.5 inch square pan? Also would i need to alter the baking time?
Yes you can. The baking time will be less and you will have to experiment with that.

I followed the recipe and placed the lemon pudding on the shortbread layer…but the top layer turned BROWN AFTER 15 minutes!…now …how to save the batch…cut off the brown layer? Doug
It sounds like you had the top heating element on in your oven if the top browned like that. You should only us the bottom element or the back if you have a fan.
