Loved the video and i think you'll inspire people to take on the challenge of owning a cafe. For me though, I'd place the portafilter cleaner in the grinding area, and the jug rinser on the left side so you can dedicate one person to steaming milk, pouring, and popping lids on and calling out orders during the morning rush. Its also important to have your fridge close by too so you're not running around grabbing milk. The main thing is working from left to right or vice versa. In a little coffee shop i owned, the cups went over the top of the machine and we did our puck prep on the right, then pull the shot, steam the milk on the left and pour and hand the cups back to the customer. Also the malkonig you have there also tells you how much the burrs have moved out of alignment during the day. You can just adjust the grind till it reaches your original grind setting and keep going. Great for new baristas who know how to make coffee but don't understand dialing in.

    • @OneIdeaTooMany

Well generally grinding is the first part of the process whereas pouring is the last part so you'd want to have the grinders at the opposite end to where you're handing the coffee to the customers so work from left to right or right to left. You'd place the portafilter cleaner near the grinders and the milk jug rinser/imilk on the other side so you can dedicate one person to steaming milk and pouring during rush hour.
