  • This video shows you how to make an Italian Minestrone Soup from scratch. For this recipe I am using the rind of the Parmesan cheese. Some people throw it away, but I like to use it for the broth of a vegetable soup. It adds a bit of saltiness and gives it a cheezy flavour. No problem if you don't have a rind, you can use some grated parmesan cheese instead.
    Serve this recipe with a slice of your favourite bread.

    Looks great--love minestrone! Going to try this fully plant-based as I have a family history of Cancer so need to avoid the estrogen and possible BLV in dairy and choline and lead in eggs. Thanks for sharing
