    I made my oyster knife, I took the thicker blade and made it shorter and it's much easier to crack the Oyster and helps prevent getting your hand. We shuck about 10 cases a day on a slow day. Great video my friend.

      @@M3D5J7 it worked great! I've now shucked both kinds that are shown in the video, but on Thanksgiving we had shorter ones. These were quite easy to shuck overall. A couple months later I had the opportunity to also shuck a bunch of the longer style; we did not have a different knife for that which made it a little more difficult but still doable.

    You should try the East Hampton Shucking tool, it's the safest and easiest way to open oysters. You dont hold down the oyster down with your hand. It keeps your hand away from the knife. You won't get hurt.

    I've grown up around fish and the ocean my whole life, nothing from the sea really has a "sweet" smell. Especially anything like oysters and clams. They will smell like the soil they live in. In my area, that tends to be kinda foul and occasionally sulfur smelling.

    I went to an oyster farm once (Drake's near SF) and I saw the young lady working there opening the oysters from the lip part of the shell. And she was real quick too. I have no idea how she did it because there are really no entry points for the oyster knife to slip through between the 2 shells. But she was using just a regular oyster knife and her speed in opening those those oysters would put a typical oyster bar oysterman to shame.

    It is an Adductor Muscle...not abductor muscle. Simple mistake but think about the shell. It is being added back together by the muscle and not abducted away from each other.

  • @StevenChisham
    @StevenChisham 6 років тому +1

    I recommend that once you open them and cut the first muscle, you dunk them into a third pan of ice water to get rid of any extra dirt or broken shell inside. sometimes they also contain tiny crabs that live between the tissue. Once it is clean then cut the second muscle.

      Yes, when an oyster dies. That's when they start to go bad. So up until the point the muscles are cut, they are alive. Now there are arguments about when an oyster is actually "dead" because some oysters hearts can still beat for hours after they've been cut. Others, they stop right then. That's just the heartbeat though, who's to say they don't just die right after that first or second chomp of your teeth. These little bivalves are amazing.

      The Massachusetts Oyster Project is working to restore oyster populations to estuaries around the state. We started this to improve water quality and offset storm run-off pollution, but we found that there were other significant benefits. We are improving fishing by supporting the food chain; 200 other species will live in an oyster reef.
