Last Thanksgiving, one of my relatives brought 100 oysters from his friend's farm on the Virginia coast. I shucked around 30 and got the hang of it because I have watched enough videos or have seen it at restaurants. Make sure to wear the glove for many reasons, from safety to keeping them dry and clean. At the Union Oyster House in Boston, they bang the shucking knife on 150-year old stones and force the oyster hinge to cut from the downward force. One great condiment is Kikkoman Ponzu soy sauce with added vinegar. It's mild, sweet, citrusy, and has low sodium.
Its such a skill to be able to do this, Chris presents this in a really engaging and clear way! I hope I get to see him in other Oyster related videos

I ordered oysters from Island Creek Ouster last December. So good, getting some for the holidays again.
1.) Don't rip the belly. 2.) watch the tiny broken shell particles before selling them 3.) use cold plate. Store them in low boy. Use crushed ice not salt.

I'm a short drive from Apalachicola. And Chefed on Cape Cod for a few seasons. And I love all oysters that I've tried. What a neat dude and cool video. We have great ones down here in Apalachicola Bay. But there's several kinds up the Eastern Seaboard and I love the variety

You should try the East Hampton Shucking tool, it's the safest and easiest way to open oysters. You dont hold down the oyster down with your hand. It keeps your hand away from the knife and you won't hurt.
Curious is there a different knife you need for scallops and mussels or do those two type of knifes cover all shellfish types on can come across ?

Great video. I love to shuck and eat the various oysters farmers grow here in the Narragansett Bay. Perfect companion to a craft beer. By the way, what caviar would you recommend for the average person who cannot drop $200 on an ounce of said fish eggs?

Set the raw oyster on a saltine cracker, add lemon juice , a touch of Tabasco sauce and a dab of horseradish , chase with cold beer! Raw oysters Florida style.
One thing I frequently encounter while shucking is that tiny pieces of the shell get into the oyster. Any advice on how to avoid that?
You can gently scrub the oyster before shucking it, at least is what I do usually. Scrubbing removes the flakey part of the shell that dumps inside the oyster ruining everything
Another thing to do besides scrubbing the shells is to wipe off your knife after you start to pop the shell off.

Oysters are a little more soft in texture and have a sweeter flavor than clams.
Clams on the 1/2 shell are on my top 3 favorite foods to eat.

yes that's the normal color. If they are nice, cold and fresh they should be fine.

No it's not bad, all oyster bar do that, they were well alive when they opened them. It's just to keep them cold. (Not suppose to be frozen tho)

No discussion on the safety of eating raw oyster & clams? I'd love some more information on this. I know buying shell fish from a farmed operation like this is typically safe but what if you're procuring them for yourself from the water?
When I was in elementary school, we went on a field trip to the seafood museum. This was in Biloxi, MS. The guy working the oyster station told us that at least one person die per year from eating raw oysters while he was shucking a raw oyster and eating it. I found out years later that he died. This was almost 30 years ago. The number of people dying per year went up. This is only in the south though.

Frieing an oyster should only be done after you have had several raw. The Fried oyster takes on a different flavor. Raw is much better.

Dead or alive, shucking shell fish is like violently ripping out the bones from your flesh. Doesnt matter if you are alive or dead you are paralyzed now. Cant scream cant cry, only pain. Pain that wont go away until someone consumes your delicious salty goodness. Mmmm delicious
So much talk about tools but no mention of the types of oysters. I used to think oysters were too salty gor me, then found out I had only tried one type - tried a less briny kind and liked it.
Gloves are for frightened stabie newbies forcing too much. A sidetowl/dishcloth is more than enough, including on day one. Pop and scrape, wipe the oyster knive all the time, never stick it in dirty, and keep it all very clean. Perfect flip and present, and if there's even the tiniest bit of shell or skank, it is a failure and a discrace to the oyster. The way to learn is to get a job doing it, or host a party with forgiving friends and shuck a couple hundred of them in a row.

How do you prevent bits of shell falling into the cup. Some oyster shells are brittle around the edges.
Most people have a cup of water on the side to dip their oyster in there for this problem.
