    Okie, let me explain the running water a bit... With this design of the stove setting, the inside of the "fire pit" is extremely hot, especially the strength of the fire is boosted by a powered blower, so it's just like a blacksmith furnace. The running water here serve as cooling mechanic, cooking water and cleaning water all at the same time, and if you don't let the water running and keep it cool, the stove can get damaged due to overheating.

    Chef Wang is the most pro Chinese cooking channel on the internet. Quick videos, no bullshit, just cooking and honesty. Even if you don't speak Mandarin the subtitles are good, and even without subtitles sometimes it is easy enough to follow if you recognize the subtitles

    Lots of ways to use the running water. Main principle is to keep the surface of the cooking top cool, so it doesn't get damaged due to the high heat the stove creates.
    The water can be used to top up on soup stock, which some restaurants have and use.
    Water also used for cooking, whether to flash steam or boil.
    Water for cleaning, woks are easy to clean on the stove, due to them still being quite hot and well oiled before cooking, a splash of cold water helps remove any stuck food items, and makes it easy to clean, and there is a drain on the left of the chef that filters any food items.
    Imagine having to pile woks in a sink for cleaning like western pans in a western kitchen. It also means less hands needs for washing up. since everyone is responsible for their own wok.

    Cold water is always necessary. To clean the wok, to shock blanched food to stop cooking, to add into wok to cool while cooking...etc

    Very big fan of chef Wang he makes alot cooking tutorials in a brief No bullshit manner, and is overall down to earth. My favorite is when he tried surströmming (a swedish kind of fermented Cannes herring, that the internet likes to make challanges out of), but instead of taking the piss, Wang took the time to look up how to eat it properly and was overall very respectfull, though after doing it the swedish way he decided it needed chili oil 😅

    The running water is to keep everything from getting too hot from the heat of the wok. Also to keep the cooking area clean from food or oils spilling on them.

    It is to prevent heat damage to the cooking appliances from overheating. 👍 He also does a demo of what will happen to the stove when the water evaporates.

    I think he is using the lower part of the green onion to fry with and the greenest part for garnish/finishing. Also, since one of the reasons for outdoor kitchens is the smell of the aromatics/spicy elements, and Japanese cuisine has fewer of these, it makes sense that fewer outdoor kitchens are found there.

    Also running water kan be used to keep some ingrediënts cool. I tend to make nasi goreng with a cold topping of cucumber quarters and beansprouts and lettuce, which you keep in slow running water so they stay nice and cold.
    So you just make nasi goreng and then you add cucumber, beansprouts and lettuce. After that you add some saté sauce and break some krupuk on top of it as a finishing touch garnish. Due to the cold topping its a very refreshing meal to eat on a hot day.

    In all reality... outdoor kitchens just make sense... you can make a large fire... but the smells are also not contained to a confined space. You can drop stuff and it becomes fertilizer :).... you can even make a mess and not really worry about what visitors think....

    I've been fortunate to have the opportunity to go to hibachi style in the US several times, and I've got to say, I've never been disappointed. The restaurants may be separate, but each cooks almost exactly the same, which means they aren't making stuff up.

    Well yeah fresh running water always you know can be diverted anywhere it needs to be used. So fresh cold running water has many uses. It just has to be kept in check so that there's not too much waste.

    Gordon Ramsay kitchen nightmares. Honestly anything Gordon ramsay, or some of the voiceless foreign gourmet shows that are German or middle eastern, they have no commentary but the strange and unique way that they perform is always very entertaining and I bet you guys would do a great job of broadening the perspective on those shows!     Tabasco is not spicy and it has vinegar which is gross. Harissa is spicy, but there are two kinds, the traditional roasted one and the one made from fresh chilies which is a little sweeter.

    Lol, in Israel or in Hebrew "para-para" means "cow-cow" which used to be an advertisement campaign for milk chocolate in the most popular milk chocolate bars in there. There was a song associated with "para-para" as it's main chorus.

      It is a wok made by metal, not a non stick pan. He used a bit of oil to heat up the wok, then pour it out, add cold oil in wok, so the wok can be non stick this time.
