    Shallots are available in Japan but more expensive than onions. Expensive grocery stores like Pare Marche might sell shallots.

    I kinda of prefer shallots to regular onions. Weirdly i also prefer green onions over regular onion. But you shouldnt have problem tossing with a wok. If you can lift the wok, its probably easier to toss in a wok because its a deep rounded dish.

    He was using shallots. Not Onion. Apparently it's a similar flavor to onion but stronger, hence his comment "only poor people use onion".

      shallots have more flavour and less spiciness. Think of it as mild flavourful onion.

      It is sweeter and more mild. Not as pungent as an onion.

    Wok tossing are easy. All you need is get use to the weight of the wok. Just like the example Steven mentioned about tossing the sand. The main trick is to get use to the weight of that wok and keep tossing it until you master it.

    The more usual wide Japanese knife is a santoku bouchou 三徳包丁.

    Instead of Beef fat, you can use Ghee made from Milk fat. It tastes good and vegetarians (not vegans) can use it.

    The ancient Greeks gave shallots their name when their traders discovered them in the ancient Palestinian port of Ashkalon (now Ashkelon in Israel) and named them after the city. Shallots were first introduced to Europe by the crusaders returning from the Middle East in the 11th century. Shallots were native to Palestine.

    That's not a onion. That a shallot. It is more fragrant that a onion. Asian use it a lot.

    When you cook your bacon save the fat by filtering it trough a paper towel into a stainless container or a wide mouth canning jar and keep it in the fridge.

    I only fry with pig fat. And I fry something every day, so I use a lot of it. In here, they don't come in little cubes, but in big packets like butter. Not all stores carry it sadly, but I'm lucky since there is one 3-400 meters from my house that does. I used to use oil for years, but once I tried pig fat, I never looked at oil again.

    Shallots are available almost everywhere, just priced higher than onions. Shallots are sweeter and milder than onions.

    We can get all kinds of onions in Britain, the most commonly used kind are the round onions that you are familiar with. I'm sure that you can get shallots in Canada, they are sometimes called 'scallions'.
