  • Ingredients: (serves 4-6)
    1 kg (2.2 lb) chicken chunks
    1 tsp salt
    1 tsp sugar
    1 tsp chicken stock
    1 tbsp curry powder
    1/2 tsp pepper
    500g (1.1 lb) potatoes
    500g (1.1 lb) sweet potatoes
    500g (1.1 lb) taro/yam
    1 tbsp minced garlic
    1 tbsp minced shallot
    1 tbsp minced ginger
    2 stalk lemon grass, bruised
    1 cup (240ml) coconut milk
    1.5 liter (6 cups) water / coconut water

    I love this dish, I used to give a vietnamese friend a whole turkey to make this. The best part is dipping the french bread in the broth.

    This recipe is a great success. My kids licked the plates clean as they've never had with my home cooking. Thanks Helen for great instructions. I'm looking forward to more great instructional videos.

    My MaMa also used cubed carrots for extra color and sweetness. She never used sweet potatoes or taro unless she was making a sweet curry with peanuts. Her curry was always the best. There was one restaurant in a food court once in Calgary that made a curry chicken very similar to my Ma Ma. The lemon grass is what makes our Vietnamese curry stand out, my MaMa also added coconut milk. Her cooking process and steps are way more simple but refined at the same time. Ma Ma's has a Thai and Cambodian twist. She was part Chinese and Cambodian. I miss her very much so I appreciated watching this. I also learned to make the best vegan curry in the world.

    CÀ RI GÀ or Vietnamese chicken curry is one of my most favorite recipes. I like the way you cut up the potatoes, nice touch. The overall recipe looked very good and simple to make. Thanks for posting the video.

    i want you all to know that i have made this recipe dozens of times- it always comes out incredibly- I use different vegetables- I also double or triple the recipe. it’s actually easy to follow and amazing!! right now i have my crock pot version cooking 💃🏼💃🏼💃🏼💃🏼

    I made this and the flavors are amazing! The two types of potato plus the taro, deep fried and then enrobed in satiny coconut-lemongrass goodness... Just wow. I will be trying more of your recipes! Thanks Helen!

    A coworker gave me some of her Vietnamese chicken curry with soft chewy French bread and it was sooooo good! I made this recipe and it taste exactly like hers

    When I was a kid our neighbor, who fled Vietnam when she was little used to make this dish for me. At least I think it was this. I remember it being a little bit sweet. I loved it and I remember it often. They were such generous and kind people. Thanks for reminding me.

    My partner has made this so many time, she add Thai basil at the end and on the side dipping sauce lime, salt, pepper and fresh chilli ❤ yummy 😋

    Awesome. I made this for my husband at the weekend (he's Vietnamese, from hcmc) and he was impressed. He misses Vietnamese food so much now we live in Europe (and because he married an English girl haha) so I'm going to try and cook more of your recipes so he doesn't get too homesick!!     I went shopping straight off the ingredients list and made this tonight, I like mine sweet so I added sugar to taste at the end. Sooooo goood, with the "Vietnamese sandwich" rolls warmed and crispy!!

    I live in Minnesota. There is no curry in Minnesota. For a while, there was a nice curry restaurant in maple grove, but it closed down...I miss curry so much. Probably going to have to make this just to get my curry fix.

      Ryan Rognas you need to go to oriental store or cub foods to get curry. In terms of restaurants, head to the cities, they are all around.

    This looks exactly like the one I had in Hue earlier in the year. Nice tip about the frying because the Malay and Indonesian potato curries do thicken up with the stewed potato so this is more soupy and light. I can almost smell it!

    one very important note about viet curry, there's a lot of residual oil at the end. this is due to the deep frying of the potatoes, the chicken fat that gets rendered out, and the frying of the onions. all of it is stuck in the broth. this gets in the way of tasting the actual curry. make sure to remove most of it before serving, until there are only small bubbles of it floating at the top. if you don't remove well enough, you will simply taste oil in every spoon.

    Helen, I love the tip on frying the potato/taro to help them hold their shape. My mom's curry was a bit thicker and creamier than yours, though. She probably used more coconut milk or coconut cream and less water. We dig fat in our house. LOL! I think the only curry powder we use is the Vietnamese Madras Curry powder that is commonly found at the Asian/Vietnamese stores. Carrots also work along with the potatoes. Yum!

    Nice, the gravy is not too thick like Indian or Thai curries. Plus, the only bread for dipping is the delicious Vietnamese breads...Yumm

    Traditional Ca Ri Ga ( Vietnamese curry) is supposed to be liquidity and thin, it not supposed to be thick like other curries from different cuisines

    You could probably keep potato skins on to avoid breaking and thicken the curry by its starch..

    You can also add some vinegar to the potatoes so that they can hold their shape instead of deep frying.

      +Helen's Recipes (Vietnamese Food) just a little bit to the outside of the diced potatoes will help it keep its shape and not make the ca ri sour at all.

      +Thao Ly Also as common sense, be careful when trying the potatoes. I forgot that the heat gets concentrated within the potato dices and burned my tongue trying it.

    This is one the very best.Certainly a favorite of mine.Maybe due to inflation, most restaurant cut down on the portion of the chicken they serve in this dish. More like curry potatoe with rice !

      The place I go to is worse... its potatoes carrots onions and rice... bit of pinneapple which is better then i expected its just the HUGE chunks of onions is horrible...
