  • Today I present one of the most famous traditional cakes in American gastronomy: Red Velvet cake.
    Its intense contrast of colors and its delicate flavors and textures make it one of the best options to make either when you have guests, when you celebrate a birthday and, of course, when you want to make an original and quality gift to some of your friends or family.
    If you have ever seen a Red Velvet cake in a bakery, you should know that one of its most characteristic ingredients is red coloring. As you probably know, there have been many studies about it that have concluded that its consumption entails a significant risk to our health.
    Are we going to get sick or worse by eating just one Red Velvet cake? The truth is that I doubt it. But it doesn't hurt to know that there are healthy and natural alternatives to replace the chemicals that surround us every day.
    That's why I wanted to introduce you to this fabulous Red Velvet cake made from beets.
    In fact, if you look at the history of this dessert, which became popular in the middle of the last century in the United States, you will see that its star ingredient was beets. In those days the chemical industry was not as advanced as it is today and the preparations of artisan bakers were usually made from natural ingredients.
    As for the white sugar that I have used for this preparation, you should know that you can substitute it perfectly well with Xylitol. Why use Xylitol instead of sugar? First of all because its taste is very similar to sugar and secondly because it has 40% fewer calories and its glycemic index is 7, while sugar can reach 70. Another interesting fact is that xylitol does not produce cavities, but rather prevents them, as well as helping to maintain good gum health.
    The only thing you should keep in mind is that it is highly toxic for dogs. So, avoid giving them a taste of your cake. What is beneficial for some living beings can be deadly for others. Keep this in mind.
    This flavoring is extracted from both birch bark and corn. They are equally healthy and beneficial, although birch bark is usually noticeably more expensive. Just keep in mind that if you choose corn, try not to use GMO corn.
    You are probably wondering why I use mascarpone instead of cream cheese in its preparation. The answer is because of its lightness. Try it and let me know.
    By the way, don't forget that to whip the cream, the milk cream you use must be very cold or it will not rise.
    As for the vinegar, you can use apple, wine or rice vinegar. We need its acidity to cut the milk and, for the quantity we use, the flavor will not be noticeable.
    Otherwise, if you follow in detail the steps I show you in the video for the preparation of this famous cake, you will surely succeed.
    Another day I will upload the recipe for the commercial Red Velvet cake, that is, the typical one you can find in bakeries. To make it, we will use coloring and whatever it takes to replicate it. This way you can compare them and decide which one you prefer to make.
    We will also make another thicker frosting. This way you can combine the two recipes and get your ideal Red Velvet cake.

    2 cups of sifted all-purpose flour
    1 cup white sugar or xylitol

    3 fresh eggs
    125 gr butter
    1 lemon

    2 cups whipping cream
    500 gr (1.10 lb) mascarpone cheese
    1 cup powdered sugar or xylitol
    1 tablespoon vanilla extract
