This dough is very similar to one my family have used for most of the 20th century - for cheese straws! My grandmother's recipe is one which requires equal amounts of butter, creamy cottage cheese (or quark, if one is able to find it!) plus flour!) Makes really delish cheese straws!

I baked off half of them and froze the remainder for a quick but elegant party hors d'oeuvres. Along with your other viewers, I too would welcome more savories. Thanks for sharing your recipe, Stephanie! I tried it and would like to share my experience, so that perhaps others may benefit. 1) I used low fat cream cheese. I will NOT do this again. The dough needs the full fat to work well. My dough was not as elastic as Stephanie's, so it was hard to handle. After baking, my turnovers had cracks running all over the surface and the pastry did not have layers. The cracks did not affect the integrity of the dough, i.e. there was no leaking of the filling. 2) The dough really needs some salt. 3) If salt is not used in the dough, one needs to really make sure the mushroom filling is well salted to your taste. My filling tasted great by itself, but the turnover as a whole was a little bland. 4) The mushroom filling was delicious. However, coupled with the cream cheese pastry it was too much tanginess. So, I would use regular cream in the filling instead of sour cream next time. 5) I found it was difficult to handle the tiny 3.5" diamter dough. I cut mine to 4" and it barely took 1.5 tsp if filling. I was able to make a total of 16 turnovers. 6) I only did a light coating of the egg wash. Next time I would be more heavy handed on the top of the turnover, leaving the crimped edges lightly brushed as they do brown more easily.

I diced up bacon into tiny cubes then fry in very little butter. Removed set aside. Followed her mushroom recipe except used 1/3 of the butter and just after the sour cream added the diced bacon and use to fill turnover. Served the turnovers with a rocket/diced tomato and avocado salad on the side for diner with two glasses of chilled lemonade. It was amazing.

This is an excellent tutorial. I too made them in the 1980s and am reviving them for a party. My one concern is that people do not put too much flour on the rolling surface, because that does risk making the flour proportion too high and the dough dry and stiff. Other than that, this is what I do.
Made half a batch last Saturday and my family and I loved them. I substituted cheddar cheese for the sour cream as the latter would be too tangy for my taste. But we couldn't taste the cheese, and it bulked up the turnovers and made a bit of leakage. Next time I'll leave it out completely. Thanks for the recipe!

Can you make these in the afternoon, say, leave them on the baking tray in the fridge overnight and bake them the next morning? Or will they dry out or go soggy overnight? Thanks for great instruction. And Baxter is a lovely dog. We knew one like him when we were children and still talk about Billy Wooten.
Ahh man I ate mushrooms last night for dinner oh well back to the store cause this is a must do!! I'll give my spelt flour a go for the crust and kefir cheese as my cream cheese replacement !! Wish me luck 😘😘
Yumm. Mushrooms with thyme and a wine sauce is one of my favorites. I would add garlic to the filling or garlic and shallots. You could also use dry vermouth instead of the white wine or in addition. Also, the earthy flavor of mushrooms lend themselves to using a red Cabernet if you don't have white wine and you could add a bit of truffle oil.

Actually I used olive oil instead of butter with very little butter it came out well.
Made these today and they are delicious! I ate a few for dinner with a small salad.
