Apple turnovers, apple dumplings. and apple pie are my 1st, 2nd, and third favorite desserts. Pick an order, any order, it doesn't matter :) I'm third generation half English American, Johny Appleseed, Yanky doodle dandy and love the apples. Sauce, vinegar, cider any which way , I love them. That being said...of course you get a thumbs up Rik :)

Hi Rik from a cold, wet & windy Scotland. These Apple turnovers look absolutely delicious, brimming with juicy fruit. Have a couple of Bramley Apples here that need using up & have just taken my pastry out to defrost, unfortunately I don’t have any eating apples to hand atm so am going to try using a couple of chopped up tinned pears, fingers crossed it works!🤞 As always thanks for sharing 🙏, & encouraging folks like myself who live alone to do some home cooking & baking. Hi RIk, do you ever use potato starch instead of corn flour to thicken your sauces? I have both in my pantry and wonder which is better to use. I know wet potato starch is used in a lot of Korean dishes and can be used to make what I like to call “quarter back ears” chips and plain white potato chips, plus it makes a really crispy batter when mixed with flour (plus or minus the corn flour) in tempuras as well as other forms of batter
I remember apple pies at shool dinners. Apple core? It was full of those little hard bits surrounding the pips and kids called them toe-nails. Yeuk! Nice one though, Rik. Might have a go at these. We buy Lidl's and they're not bad.
We live in Adelaide, South Australia now but when we lived in Concorde, NSW we used to buy apple turnovers from an Italian Pasticceria and they used to cut them open and pipe fresh cream inside. My Husband loved them. I had forgotten about this until I watched your video. I will have to make some and surprise him. Thanks for the recipe. Your recipe is easy and they look delicious. I used 4 Granny Smith apples & 4 of the beautiful ruby red fleshed red love apples we have & what a gorgeous rose coloured mix it ended up making. I’ve used canned apple pie filling which I chopped. To that I add fresh diced apples and some additional apple pie spice and sugar. I’ve cooked the fresh apples a bit before adding to the store bought filling. I haven’t used puff pastry for the turnovers. I use prepared pie crust. They can either be fried or baked. I bake. Fried is just too greasy for my liking. Thank you for the suggestion.

Test on the stovetop: Before baking, simmer a small amount of filling on the stovetop with the starch. If it thickens to a syrupy, but not overly stiff consistency, you've added the right amount. Starch to fruit ratio: For wild blueberries, a good starting point is 1 tablespoon of potato starch for every 2 cups of blueberries. Adjust based on how much juice is released after they thaw. You can increase slightly if the blueberries are extra juicy, but be cautious not to over-thicken. Thank you. Best, Rik
