4 Boneless Skinless Chicken Breasts (sliced in half horizontally)
32 oz Whole Peeled Plum Tomatoes (crushed)
20 oz Tomato Puree
1/2 chopped Onion
2 cloves Garlic (sliced/halved)
1 tsp Oregano
2 - 3 cups Italian Seasoned Bread Crumbs
4 extra large Eggs
Garlic Powder
1 1/2 lbs Whole Milk Mozzarella
1/2 cup chopped fresh Parsley or Basil
Grated Pecorino Romano Cheese
Olive Oil
Salt & Pepper to taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

And to everyone complaining on how much cheese she's using, I'm sure if someone was cooking their own dish they would use more or less of an ingredient. This is how she makes hers, I'm sure her family loves it as is. The beauty of recipes is that you can use more or less of toppings and certain ingredients.

Also it's hospitality and generosity for her children...Those normal qualities are quickly disappearing in modern people....I dated a cute woman for a month 4 years back
(age 51, she did not work). I took her out to eat 4 times, I then said to her "Don't you think it's time you cooked dinner for us one night?"....She the started ranting like an animal (Ya know it's HOT!!!), she obviously had air conditioning....Then RANTED she'll "do it tomorrow" (which I no longer wanted). I already knew from her prior hijinks that she wasn't going to answer the phone the following day and she PROVED ME RIGHT. That was THE END of that lowlife....
Wow for almost 85 she's really so energetic and alert. May God continue to bless her with good health and lots of love and happiness!!!

I love your Nonna. I was a skinny poor mixed race kid in Newark N.J. and I always made sure I had Italian friends. I would hang in the kitchens, get yelled at, do dishes, sweep, what ever it took to make and eat this food. They would be like who is this kid lol. They would say you so skinny, your Momma dont feed you and she actually did, but I'd say no..I ate a whole lot of love. I still make Sunday gravy. And the kids still come. Tell her hi from Canada and lots of love.

This lady is the real deal, having had the good fortune of growing up in a neighborhood full these type of people and eating the most amazing food for most of my life. Dear Grandma ~ Thank you for being such a blessing to us. Your wonderful cooking reminds me of my own mother that if she were still alive would be 122 years old. Yes~ I remember those heartwarming memories of the harvest from are own garden with fresh tomatoes and the process of the canning for our pantry for the whole year along with all the other fruits and vegetables that we enjoyed through those winter months. I myself have learned other favorites of canning with the technique with meat and turkey that just melts in your mouth. I have watched two or three of your video today while we are all going through the isolation with the Coronavirus and staying safe. I just want you to know how meaningful your time and energy means to us to see your skill in the kitchen and not to mention your beautiful singing at the end giving much praise to are creator who provides to us all.

I love the cooking lessons from Gina. The way of life, family, and the foods that Mediterranean countries eat are so very good for you. Wish I had known more about this before my heart problems. A four way bypass, I am told by my heart surgeon, and Cardiologist it is possible to possibly reverse cholesterol, etc. Hopefully people pay attention, and will help prevent and treat.
