      Hi!
yes, you can buy annatto extract online and in some stores, but you do NOT need it to make yogurt.
It's typically used in milk products such as cheese and yogurt as a natural food coloring. There are pros and cons (it can be healthy, but it can also cause allergic reactions in some people), but it's not necessary.
If you choose to use it, don't add it to your yogurt until after you've finished the yogurt making process.
And thank you for your question, I hope my answer helps you!

I make a half gallon of yogurt at a crack in a 3 qt Instant Pot. Pour in the milk, hit the YOGURT button, select BOIL. When the cycle is done you take out the pot and let the hot milk cool down to 100 or cooler - I just put it on the counter for a couple of hours. Take the scum off the top, mix in maybe a half cup of plain store-bought yogurt with a frother, put the pot back in the Instant Pot, close it, punch YOGURT and select if you want 8 hours or 24 hours. I always go for 24. The next day DING! DING! DING! - you have a big pot of yogurt. I put the lid on the liner and stick the whole thing in the fridge and scoop some out when I want it. Personal time involved is under five minutes. The Instant Pot does the rest.

I love what you're doing! I haven't tried doing it in the actual IP bowl yet simply because I'm afraid it'll take on the odor of any food I've cooked in it (even though it's clean 😊).
But I keep telling myself to try it!
