Have you ever been to Vietnam? There's countless variations on the Bánh mì. Mayo, no mayo, pate, no pate, pickles, no pickles. Christ there's even Doner Kebab Bánh mì's available now with mayo. You say there's different kinds in regards to the meat, it varies by regions - the meat is almost always interchangeable. Saigon will have the corriander, pickles, cucumber, other areas maybe not. His baguette also wasn't made with rice flour, does that make it 'not an OG Bánh mì'?
relax, dude. it's just a recipe -- a suggestion. he made one version. i'm making one for dinner tonight that uses roasted Cajun white boudin with roasted red bell peppers and pickled jalapeno slices, with a mayo/stone-ground mustard spread mixed with black pepper and celery seeds. and i don't have a baguette, either -- just a store-bought French onion loaf, like a sub roll. it may not be what YOU consider to be kosher or *de rigueur*, but it looks and sounds delectable! in the future, i'm considering making a version with pulled pork, too. just think of this offering as *Banh Mi a la STCGO*.

your pork looks fantastic. I was using thin sliced pork shoulder meat you buy at asian markets and I think it soaked up too much salty marinade.I love the idea of using pork tenderloin. the traditional version uses a pork pate spread instead of mayo. it's kind of hard to find but I do think it adds something. first few times I bought these sandwiches at Vietnamese restaurants I tasted this funny pink looking paste on it and didn't really like it. I didn't know what it was at first, why is some ham tasting paste even on there? then found out later it was the pork pate spread. now, I like it. probably not necessary though but I use both mayo and the pate

When people see me sneaking in soy sauce and fish sauce into A LOT of my dishes they’re like yuck eewww. Then I explain that Worcester’s sauce is ALMOST the same thing. I tell them to look it up on UA-cam. There’s a video on how they make Worscheshier sauce. Main ingredient FISH
I buy Bahn Mi from Viet Namese joints in Houston all the time (we have a rad Viet Nam community here) and their sammiches are small by comparison, but the price is right, I just order 2. It's awesome.
