If you cut hot chillis, it's a REALLY good idea to use food gloves. Even kitchen gloves like marigolds are better than using your bare hands. The capsaicin oil is very difficult to wash off, so even touching your eyes after multiple washes with soap can be very painful.
I made this mistake with Scotch Bonnet peppers, and I'm not eager to do it again, lol.

rookie chili mistake though! Also a bit of a bad Food hygiene marker, rubbing one's eyes while cooking!
Quick tip for making the fries/chips not so fragile: Boil them with a small amount of white vinegar in the water! There's a chemical reaction inside the potatoes that will allow them to be a bit more durable, they'll have an actual bend to them without breaking! The flavor is entirely unaffected as well, I promise if you don't overdo the vinegar on accident, you won't taste it at all (not that I personally mind it, I add a little extra for the vinegar flavor myself!)

Vinegar mimics the taste of salt. ;) It's also healthy. You can't hardly go wrong with it.

They easily fall apart if you boil them too long. And like elfin said it's just after they're boiled pre-fryer.
I'd just use McDonalds curry sauce mixed with cream - much quicker than the above. A UA-cam short version of this'd be good.

Just got to the chilli eye moment... One tip I was given decades ago was to rub oil (veg, olive, whatever) onto my hands BEFORE chopping chilis as it stops the capsaicin from getting into your pores and is easily washed off after you finish chopping...
Oh... and yes.... I've done it... and the 'other' chili burn thing that guys often do.... 😯
I once had a chilli moment with contact lenses in, had to throw those away

Important to note that in Ireland we have 2 main types of curry sauce, theres a curry sauce from a traditional burger and chips takeaway, and then theres an entirely different type that youll find in chinese takeaways. The difference is night and day.

@@herecomeseveryone7562 I forgot about them. You might be right. It used to be a powder produced in China to which hot water is added. It was used in most takeaways. It may have changed to the domestic brand now.
@@michaelcaffery5038 i owned a chipper it's been in my family for over 40 years, we use a powder, it's made in Ireland, the chinese use a very thick oily paste, based curry you get a lot more for your money but it takes longer to make,

Interesting! I've never heard of this before. It reminds me of Taiwanese street snacks where they would mix their signature popcorn chicken, fried fish tempura, Taiwanese sausage, pork blood rice cake, and other delicious fried things. This looks just as tasty

Hey! I’m and have a lot of Taiwanese friends and was there for a month. It’s very like the seasoning on chicken streak. In Dublin my friends have a restaurant doing Taiwanese chicken steak but using the Irish style spice bag seasoning and it’s UNBELIEVABLE, better than what I had in Taiwan which might be rude but genuinely. 10/10

Pro Tip, use a milk compress to counteract capsaicin exposure to your eyes. This works for pepper spray, too. 😉

Spice bag is so popular here in Ireland, and with good reason. delicious and has a bit of everything in it, the salt and chilli together with the onions chicken and chips is just superb.

My favourite Chinese place for a spice bag closed down last year, and ever since I've been trying different places trying to find one as good. Mixing up raw ingredients is one of the reasons I keep heavy duty rubber gloves in my kitchen.
That and shredding roasted chicken cooked for the dogs. They're just so much easier to shred when hot.

Yea my go to takeaway is usually a spice bag and this is spot on. My fav place does green bell pepper and red chili, and a tonne of diced garlic. But all not places do that. Its a preference. The chicken isnt particularly hard to make, but the chips and curry need to be proper chinese takeaway style. You nailed it!

@@mollywhoppedsouls_pvp A chicken fillet roll is crusty demi baguette (about 12 inches) sliced lengthways and spread with butter or your sauce of choice like mayo/taco sauce/sweet chill/garlic mayo etc, a warm breaded fried chicken breast sliced and whatever salad you like on top. Everything is really fresh and filling. It's been years since I've had one and could probably only eat half now. A lot of construction workers get them for their lunch but they're so active they work them off. I'd need a nap if I ate a whole one 😄

I just wanted to add...as a pepperhead I have very much experienced spicy eye. I smoked some scorpion peppers with pecan wood, then ground to use like crushed red. Anyway I had some of the dust blow in my eyes due to opening my oven with a peppered pizza on the stovetop. I was glad I knew the location(while blinded) of the milk and paper towels, milk on a paper towel is miraculous on pepper eye.
Can't wait to see all them surprised looks at work when I get my bag out for lunch... 😁.

in most chinese restaurants they use birds custard powder with the corn starch it sounds weird but it works and dont forget the MSG, the MSG is massive for a spice bag

Im Scottish but ive had a spice bag. This is a fantastic representation. For and extra dimension to the spice you need some szechuan peppercorn for that numbness too.

The Big Tex Choice Awards have been going on for a number of years, so there are a bunch of things to choose from. One of my favorites is from last year - the Holy Biscuit! Buttermilk biscuit, beef brisket with BBQ sauce, Mexican street corn, queso, and hickory smoked bacon for one incredible sandwich that I will remember for the rest of my life!!!
