I made this (not the $700 steak, but a couple of damned good striploins!) for my wife today, complete with the potatoes and the Banofee pie (first time I've ever made the caramel that way). The only thing I did different was instead of using maple syrup in the whipped cream, I used a couple of glugs of English Toffee coffee flavouring (OMG...you've GOT to try it!!) It was amazing!!
My wife had a particularly difficult day at work today, and she came home to the aroma of the pie, tasted the flavoured whipped cream and had a genuine "Sam" moment after tasting the cream. Then she tried some of the whipped cream in her coffee...and had a second "moment"! I've been cooking for my wife for over 35 years, and her reaction to the food was, by far, one of the best ever! She told me that the supper completely turned her bad day around! What a great start to 2025! Thanks Sam, most appreciated!!

The dulce de leche is available in same size xan already caramelized usually in the Hispanic food aisle from Nestle La Lechera beand and almost the same price as the sweetened condensed milk. Just a note to save time preparing .

Took a 1/4 inch off the side of my thumb making Au Gratin potatoes with my mandolin, back in October. It’s officially healed over the holidays. I wear a chain glove now. Be safe out there, fellow cooks, chefs, and bakers! Those things are no joke. 👍 Happy New Years!

Hey Sam! I seen an Amish cook make caramel the same way and she opened both ends of the can and just pushed the bottom out luke a Push-Pop and cut slices of the caramel for a different desert. Pushing it out with the bottom lid made it very easy to get it all out without much effort! Happy New Year! That meal looks amazing! I am going to have to make it with a little less expensive steak!

Happy New Year, everyone! And pro tip for making that dulce de leche/caramelinnacan: Do it in the slow cooker, aka crock pot. Very little chance of your pan boiling dry, and while it might take a wee bit longer, you can do several cans at a time and have some to keep on the shelf for a dessert emergency. Just don't use a can with a pull-tab top.

I'd love to make this, but I'd go a bit more cost-effective and use a thick Ribeye. I'd also use some crispy bacon bits to sprinkle over the banana pie. 🥓🥓🥓

You make California seem awesome. I spent the first 18 months of my life (including birth) in Fairfield and at Travis Air Force Base and haven't been back to California since. I'm 36 and my dad STILL talks about how much he loved California.

Mexican Lasagna (Can you try)
Ingredients:
2lbs ground beef
28oz Tomato sauce
1 cup ea Diced tomatoes and green chillies
1 can red kidney beans
1 cup sliced olives
1 onion diced small
1 large bell pepper diced small
1 1/2c mushrooms diced. Optional
1 Lrg bag Mexican blend cheese
1/3c Taco seasoning split
4- 12" flour Tortillas (2 cut in half)
Directions:
Cook ground beef and add half of taco seasoning. Combine all other ingredients except tortillas and cheese in large bowl with remaining seasoning.
Layer ingredients in 9x13 pan. Start with mixture then cheese and then tortillas (one whole and 2 halves to create layer). Repeat and finish with mixture layer and cheese. Bake in 350° oven for 25-30min.
Made the Banoffee on NYE as it’s my father-in-law’s birthday and he doesn’t like cake. OMG!!! Thankfully I made two of them because everyone , including the owner of the bar/restaurant we took it to, loves it and begged for the recipe. It sounded weird but it is a keeper! Even better for hungover breakfast this morning!

Dulce de leche ( manjar in Chile and cajeta in Mexico ) is faster and easier in a pressure cooker. 45 minutes, natural release and bob’s your uncle

Sam, the flames are from the fat melting. You want to keep it there. You’re charring the meat. Charring is flavor. Once each side has a beautiful char approx 3 minutes a side move the meat to cool side to cook internally. And start your basing at this point. If you’re basing from the beginning, you’re burning your basing by causing the flare ups.

You can't make essentially scalloped potatoes and caramel pie? Way to begrudge someone for treating themselves after a good year.
Like my only critique is that all their recent videos have been on the short end. 6,7,8 minutes. I like watching these guys make good food so I wish for longer videos.
Hey Sam - you should keep the top vent of your kettle fully open to allow it to breath properly. The bottom vents control the temp and if you shut off the top vents, you risk having too much smoke which creates a dirty heat and it can cause pretty harsh bitterness on the food.
Love this idea! I don’t have $700 to spend on a steak, but if I did that I’m sure would be well worth it. Btw I made your recipe for beef Wellington on Christmas and that was amazing. The Home made crapes we also great as a sandwich wrap & breakfast omelette roll. 😋 Happy & healthy new year to you & crew. 🎉

Many years ago, we had the pleasure of going to a Restaurant in Monkington, the birth place of Banoffee Pie, 2 coarse meal and then the dessert, brilliant evening, even met the lady who invented it.

First off, great video, great year, keep up the good work! That pie and those potatoes look insane, definitely going to give them a shot. However, I do have one suggestion to make. Get yourself a squirt bottle, or just a spray bottle for controlling the flames on the grill. Works like a charm. ^_^
