    Ingredients:
    3 lbs (1.5 kg) mutton, washed and cut into pieces
    1 tbsp turmeric powder
    1 tbsp red chili powder
    1 tbsp coriander powder
    Salt to taste
    6-8 tbsp mustard oil
    2 tbsp ginger garlic paste
    For the masala:
    3 lbs (1.5 kg) red onions, thinly sliced
    8-10 cloves garlic, chopped
    5-6 green chilies, chopped
    Whole spices (for dry roasting):
    3-4 dried red chilies
    2-3 bay leaves
    1/2 tbsp whole coriander seeds
    1 tbsp cumin seeds
    1 black cardamom
    1 stick cinnamon
    1 inch nutmeg
    Instructions:
    Wash 3 lbs (1.5 kg) of mutton pieces thoroughly and place them in a large bowl.
    Add 1 tbsp turmeric powder, 1 tbsp red chili powder, 1 tbsp coriander powder, salt to taste, 6-8 tbsp mustard oil, and 2 tbsp ginger garlic paste to the mutton. Mix everything well, ensuring each piece is coated with the marinade. Set it aside to marinate for at least 1 hour.
    While the mutton is marinating, prepare the masala. Thinly slice 3 lbs (1.5 kg) of red onions, chop 8-10 cloves of garlic, and chop 5-6 green chilies.
    In a dry pan, add 3-4 dried red chilies, 2-3 bay leaves, 1/2 tbsp whole coriander seeds, 1 tbsp cumin seeds, 1 black cardamom, 1 stick cinnamon, and 1 inch of nutmeg. Dry roast the spices over medium heat until fragrant.
    Once the spices are fragrant, add 6-8 tbsp mustard oil to the pan. When the oil is hot, add the chopped garlic and green chilies. Sauté for a few minutes until aromatic.
    Add the thinly sliced onions to the pan. Cook the onions over medium heat until they turn translucent and golden brown.
    Now, add the marinated mutton to the pan. Adjust salt if necessary (remember, salt was added during marination). Mix well to combine the mutton with the masala.
    Cover the pan and cook the mutton over low heat for about 45 minutes, stirring occasionally. The mutton will release its juices, and the onions will cook down, forming a rich gravy.
    After 45 minutes, check the mutton. If the gravy has reduced significantly, add about 1 cup of hot water to the pan. Mix well.
    Cover the pan again and continue to cook the mutton for another 30-45 minutes on low heat. Slow cooking is key to tenderizing the mutton and developing deep flavors.
    Once done, check for seasoning and adjust if needed. Your delicious Bihari mutton is now ready to be served!
