I just love all your recipes and the way you explain your culinary art! 💝 This Bhuna Gosht reminds me of Mutton Kosha that we cook in West Bengal... I know there is a similar recipe called Mutton Kalo Bhuna (Mutton becoming black because of the bhuna process) in Bangladesh. If you come to the USA, I invite you to my home for some Bengali Mutton Kosha that I cook ... We traditionally don't use tomatoes in Mutton Kosha and use minimum whole garam masala so that the garam masala's fragrance does not overshadow the mutton's flavor!
Same here. Cooking basically feels like preparing substrate for me. We're already good with mortar and pestle and washing dishes in lab LOL. Mutton/chicken kosa is popular in odisha as well. I made it with my Bangladeshi friend. It's basically the same dish throughout that region.

I am 86 yrs old., in 1953-54 it happened to in our Neighborhood had Malbari Restaurant., Musaka chef use to make Bhuna gosht there he use to all green Masala e.g. Corriandar power, Cumin, onion, garlic, ginger, green chili etc. now a days very few Restaurant makes Bhuna Gohst like that.
