    Natto, Japanese fermented soybeans vs. Indonesian fermented soybeans.
    In today's video, I am comparing natto and tempeh, the two popular Asian fermented soybeans.
    (I made a mistake on vitamin K2 content. It should be natto containing about 1000 micrograms per 100 grams and tempeh containing 1/60th of it, which is about 16,6 micrograms per 100 grams. I am sorry about the confusion.) I

    See references in How Not To Age by Dr. Greger released in Dec 2023, where tempeh has 9.7mg/100g and natto has 8.2mg/100g of spermidine. Tempeh is one of the top sources of spermidine.

    I just got your natto book on Kindle. I love it!!!!! It's amazing. Do you have a book where you discuss particular Japanese foods, such as how to make pickles and what is the best vinegar? Also, you talk about heavy metals in tuna, but what about the toxins in seaweed when the ocean is polluted?

      Thank you for reading Natto Unleashed. I am glad you like it. I don't have a book on pickles, but organic brown rice vinegar is considered to be the best vinegar in Japan. I am sure certain seaweeds are contaminated with heavy metals but I don't think it is as much as tuna since big fish like tune is at the end of the food chain. Whether to include small fish and seaweed in your diet is the question of your priority. If we try to avoid everything, there will be nothing left to eat. By including food like brown rice, you can detoxicate some of the toxins you have absorbed.

    Hello I was wondering if the natto powder is just as healthy as natto made with soy bean? I have heart disease and want to consume it but would prefer the powder..please advise me.

    My first time to hear of natto.
    By the way is it possible to cook the soaked soybeans in an ordinary stsinless steel pot till it is soft?

      Yes, you can steam soybeans using a regular pot. It takes much longer time, though, between 3 to 6 hours.

    In your book , you say that there has been so studies on femoral fractures and natto. I thought there have been. Many years ago, a friend told me a study showed that people who eat natto daily do not get hip fractures. I was always hoping to read this study. It was based on what this person said that I began the process of eating natto frequently, which was very hard to do as an American. The taste is awful for AMericans, but I learned to ignore the taste.

      but it has only the abstract.
      I can't find the detailed study on this and I am not good at reading scientific papers anyway.
      Some people say there is no concrete evidence on it
      In the book, I didn't want to get into scientific data on it when I wasn't sure since it is not my field of expertise.

    do you have a recipe to make your own karashi mustard sauce?

      No, sorry, I don't know how to make karashi myself. I just use soy sauce, and not karashi. But I will look into ways to make karashi.

      Hi Sachiaki San. May I ask which is the best soy sauce to use for natto for you? I am using kikoman, but I would like to know which soy sauce you prefer. 😊

      @@markpelayo if you are in America, I recommend certified organic Tamari soy sauce (so delicious) or the healthier but more expensive Ohsawa Nama Shoyu, which is raw and unpasteurized

    In indonesia, beside tempeh we also have something like natto, we call it tauco. it's so stinky n slimy.

    u have mentioned vit k2 content wrong wrt to natto, natto has approx 1000 mcg per 100g

      I am sorry. Yes, you are right. Natto contains 1000 mcg and tempeh around 20 mcg. I asked Bard about it but, it was wrong, apparently. Thank you for pointing it out.

    I just read that you can feed Natto to horses. But what about cats?

      Yes, you can feed natto to horses. One of the theories of natto origin says that samurai warriors were feeding steamed soybeans to their horses, and sometimes, beans got fermented and that is how they discovered natto. I don't know about feeding natto to cats since cats are carnivores.

    almost nobody eats tempeh raw, so it's not accurate to call it a probiotic.
    Because we cook it, it's possible to eat large quantities of tempeh, such as 8 ounces for women and a pound for men in just one day, which is a lot of protein.
    Because Natto is raw, it's too powerful to eat large quantities. For the average woman, 8 ounces of natto would last about one week, in order to get sufficient vitamin K2 daily with one ounce daily. How many ounces do you eat daily?

      Thank you for your information. I will study more about tempeh. As for the amount of natto, I eat 50 grams to 100 grams, which is about 1.7 ounces to 3.5 ounces a day depending on the day, when I do strength training or not.

    I want to eat natto but in India we don't have it...
