Despite I didn't use a slow cooker or a pressure machine, it was so tender, and the meat fell right off the bone when you bite into it. My Korean friend was over when I made it and she expected them to come out mediocre at best but she said I nailed it and that they were perfect. Thanks for the recipe!

As planned, I made these last night and they turned out excellent. In America you typically get a "rack" of 12 ribs, so I made all of them...about 1 Kg. I did scale up the recipe accordingly but not more than double the quantities recommended for 400g of ribs. My 10 year old son helped me make them and we both loved the end result. I did have to take the ribs out and reduce the sauce to a glaze but that isn't necessary if you plan to eat rice alongside. The sauce is super flavorful and a little goes a long way. I can see myself making this again and also using this simple technique for other braised dishes. Thanks for sharing.

I don't understand why you removed the oil after searing the garlic cloves and ginger slices in it before adding the ribs? Wouldn't that oil be extremely fragrant and enhance the flavour of the ribs and hence a waste to toss out?
My ribs are different. From yours can I boil the rib first to get rid of the small bones? Because the bones going to mix up with the sauce after it braising so long
To keep it authentic, use like a few teaspoons of Szechuan peppercorns and a few dried red chili peppers when braising. After it's done, you can also add freshly chopped Thai red chili peppers and dash it with black/white pepper. "Fire in the hole."
Hihi. Your boss can’t eat sugar because of his health or he doesn’t like the taste of sugar in his food? Maybe you can reduce the oyster sauce by a bit because without the sugar to balance out, this dish will taste quite salty. Hope this helps.
It looks great but I made this without the wine and my family didn't like it so much because the flavor wasn't in the meat (just outside it) maybe it needs marinating? My family is hard to please haha
Opps. Maybe cos your dark soya sauce is not thick enough? You might wanna add a little more dark soya sauce. If it’s too salty already then I don’t recommend that.
