doctor from singapore working in london here. just made this, i used the steam while cooking to steam overnight rice, everything came out fantastic. used laoganma spicy sauce because i didn't have dou ban jiang. thank you for saving this fellow singaporean's soul 🤩
Thanks for the new dish.i always come to your channel to get an idea whenever i dunno what to cook .the most thing i like is you put an effort to write down all the ingredients at the description to make it easier for us .
Hi Roland.,I just cooked this dish today. I use chicken wing instead of pork rib. Shorter cooking time. Lol.. Just wanna say this dish taste soo yummy. Even my picky family give a thumb up 😊
Thanks for the recipe Roland. It was yummy! I made it last night along with sauteed garlic eggplant and blanched Yu Choi Sum in garlic sauce. I followed the recipe (doubled) almost exactly except I marinated the meat for an hour with some spices and cornstarch. I'm not sure why but mine did not come out red like yours; it was a deep brown. It was also a little salty for me so I will dial back on the soy sauces next time.😋
Hi Roland, this dish looks so tempting 🤤 I don't have and have never tasted spicy broad bean paste. If I want to substitute it with Korean go chu jang, what ingredients do I have to add or reduce? Or will it be just fine without any changing? Thanks
It will be fine although if you like it spicier, you can add a little bit of chilli powder or flakes to it. The saltiness will be more or less the same. Just taste and add to your taste.
Hello is it the red bean curd that makes it so shiny. Thank you I’ve made this several times and it’s always delicious but not shiny. I almost never have bean paste.
Thank you for this recipe! I love pork ribs but unfortunately they are sold here only as long ribs so I've been trying to cut them into short pieces. Sadly, the rib seems to be stronger than the meat cleaver. 🤔🤔 Could anyone who reads this please recommend a good quality meat cleaver, regardless of the price! Thank you.
@@spicenpans Thanks to both of you but where I live, it is very difficult to access a butcher. Here, the only way to buy any kind of meat without pain is the supermarket. COVID destroyed so many small businesses.

Hi Roland, just wonder if any particular pork ribs we should choose to avoid it from becoming 柴(too dry)? Normal pork ribs or premium loin ribs?

Yes most definitely, Agnes. That will be your secret sauce 👍👍👍 happy cooking. Hope your grandkids enjoy it
Looks delicious...can I try this in Instantpot?
Hi Khadija, yes absolutely. Happy cooking!
Yummy 🤤🤤🤤 fantastic ribs ❤
Hi Roland how to make the rib tender?I followed your recipe but after 45 minutes the ribs are not tender as I like it to be
Hi LL, you can cook them for another 10 to 15 mins. They should be more tender by then. Happy cooking!
What you didn't mention Chef Roland is that this dish is too darn addicting!!!!
I like ribs because they have sweetness and tenderness
We agree with you, Kievan :) Have a good weekend in advance!
wowwww! so yummy
Thank you so much, Kievan!
WOW Thanks
You're most welcome, Perera. Thank you so much too!
Looks yummy 😋

Instead of vinegar and rice wine vinegar, can you use Shaoxing cooking wine?
Super yummy

Mouth watering
Thank you so much, Ilsa!
Hi, I’m one of your subscribers and I really love your cooking. Can I request please. Can you share how to cook beef offal soup Hongkong style 😂
Will try to do so but it is really difficult to get beef offal in Singapore.😅
How do I make bean paste?
Hi Julia, you can get them ready made in a bottle from Asian supermarkets.
Hello I would like to cook this for my kids, what can I replace for spicy broad bean paste? They cannot take spicy food. Thank you ◡̈
Hi Roland what brand oyster sauce you are using?
Hi Alicia, we're using Lee Kum Kee. Happy cooking!
can we use pork belly for this too?
Yes absolutely. Happy cooking, Sing G!
@@spicenpans thank you!
Hello there, can I use beef on this recipe?
Hi Roland, what's yr opinion if we use pressure cooker to cook this dish
You can do so, save about half the time but you will still need to reduce the sauce

Can you ask the butcher to cut them for you? We do that here.
Hi Rick, Purple Thumb's idea is very good. Yes we also ask our butcher to cut them up for us.
@@spicenpans Thanks to both of you but where I live, it is very difficult to access a butcher. Here, the only way to buy any kind of meat without pain is the supermarket. COVID destroyed so many small businesses.
Heavy meat clevers are widely available on Internet
@@M-H433 Well thanks for contributing but guess what? I've figured that out years ago. The question remains - which brand?
how to make sure the ribs are not over cooked?!?! can see the sauce is "boiling" after 30 minutes opening the cover
Everytime i cook your recipe they always thought i'm very good in cooking haha.
Hehehe that's good to know but I seriously think it's because you're actually a really good cook :) Have a great weekend, Dannah!
