  • Braised pork ribs is a popular Chinese dish that is both easy to prepare and extremely delicious. Braising is a great way to achieve a melt-in-your-mouth or fall-off-the-bone texture. The sauce of this dish is slightly sweet, savoury, and sticky. To round out the meal, serve these ribs with steamed rice and green vegetables. You could even make a sunny side up egg for each serving. Perfect!
    This dish can also be served as part of your Chinese meal repertoire, which is usually planned to ensure that the dishes complement each other in terms of flavour, cooking method, and texture. For example, avoid serving two deep-fried dishes or two dishes with the same protein at the same meal.
    The number of dishes to serve is determined by the number of people eating, and the amount of food to use in each dish can be gauged by estimating how much food each person will eat from each dish to feel satisfied. For example, you may want to plan on each person taking at least two ribs from this Chinese braised rib dish. A five-person menu might include a meat dish, a seafood dish, a vegetable dish, a tofu or egg dish, a soup, and plain steamed rice.

    Super Easy Chinese Braised Ribs in Secret Sauce 秘汁排骨 Chinese Pork Rib Recipe
    Ingredients:
    Serves 4 - 5 pax (if served with other dishes)
    Serves 2 - 3 pax (if you are having this on its own with rice)

    500g (17.64oz) pork ribs
    2 chopped shallots
    3 cloves chopped garlic
    1 tablespoon spicy broad bean paste 豆瓣酱
    2 tablespoon black vinegar
    3 tablespoons Chinese white rice wine 白米酒
    Enough water to cover the ribs
    1 tablespoon oyster sauce
    2 tablespoons light soy sauce
    1.5 tablespoon premium dark soy sauce
    2 tablespoons brown sugar sugar
    A handful of chopped spring onions

The one we use has a really nice consistency - it's not too thick but not too watery. It's also not too salty and has a slight tinge of sweetness. The main purpose of dark soy sauce is to give your dish a dark colour with a really nice caramel taste)

    doctor from singapore working in london here. just made this, i used the steam while cooking to steam overnight rice, everything came out fantastic. used laoganma spicy sauce because i didn't have dou ban jiang. thank you for saving this fellow singaporean's soul 🤩

    Thanks for the recipe Roland. It was yummy! I made it last night along with sauteed garlic eggplant and blanched Yu Choi Sum in garlic sauce. I followed the recipe (doubled) almost exactly except I marinated the meat for an hour with some spices and cornstarch. I'm not sure why but mine did not come out red like yours; it was a deep brown. It was also a little salty for me so I will dial back on the soy sauces next time.😋

    Hi Roland, this dish looks so tempting 🤤
    I don't have and have never tasted spicy broad bean paste. If I want to substitute it with Korean go chu jang, what ingredients do I have to add or reduce? Or will it be just fine without any changing? Thanks

      It will be fine although if you like it spicier, you can add a little bit of chilli powder or flakes to it. The saltiness will be more or less the same. Just taste and add to your taste.

    Hi Roland how to make the rib tender?I followed your recipe but after 45 minutes the ribs are not tender as I like it to be

    Thank you for this recipe! I love pork ribs but unfortunately they are sold here only as long ribs so I've been trying to cut them into short pieces. Sadly, the rib seems to be stronger than the meat cleaver. 🤔🤔
    Could anyone who reads this please recommend a good quality meat cleaver, regardless of the price! Thank you.
