KHOW SUEY
Preparation time 10 minutes
Cooking time 15-20 minutes
Serving 2
Ingredients
For Curry
2 tbsp Oil, तेल
Prepared Paste, तैयार किया हुआ पेस्ट
1 tsp Coriander powder, धनिया पाउडर
¼ tsp Turmeric powder, हल्दी पाउडर
½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 Carrot, diced,, गाजर
⅓ cup Baby Corn, sliced, बेबी कॉर्न
2 medium Onion, chopped, प्याज
3 cups Vegetable stock, वेजिटेबल स्टॉक
Salt to taste, नमक स्वादअनुसार
1 tsp Sugar, चीनी
1 cup Coconut milk, नारियल का दूध
few Spring onion, chopped, प्याज पत्ता
few Coriander leaves, धनिया पत्ता
For Paste
2 Green chillies, broken into half, हरी मिर्च
4-5 Garlic cloves, लहसुन
½ inch Ginger, peeled, roughly chopped, अदरक
Salt to taste, नमक स्वादअनुसार
For Garnish
1 cup Noodles, Boiled, नूडल्स
Spring onion white part, chopped, प्याज पत्ता
Peanuts, crushed, मूंगफली
Chilli flakes, चिल्ली फ्लेक्स
Brown garlic, sliced, लहसुन
Brown onions, प्याज
Lemon wedge, नींबू की फलियां
Chilli oil, चिल्ली आयल
Coriander leaves, धनिया पत्ता
Process
For Paste
In a mortar pestle, add green chilli, garlic cloves, ginger, salt to taste and make a smooth paste of it.
For Curry
Heat oil in a kadai, add prepared paste and saute for a minute.
Add coriander powder, turmeric powder, degi red chilli powder, add little vegetable stock and saute it well.
Add carrot, baby corn, onion and saute for a minute.
Add vegetable stock mix well. Add salt to taste, sugar and stir well.
Cover it with the lid and cook on medium flame for 5 minutes.
Add coconut milk and mix it well. Allow it to boil for some time.
Add spring onion, coriander leaves and stir well.
For Garnishing
Take a serving bowl, add boiled noodles, top it with green onions, peanuts, chilli flakes, brown garlic and onions, lime juice, chilli oil etc. and then top with coriander leaves.
Your delicious Khao Suey is ready.

Chef kabhi Surat aao.. We call it "Khavsa".. there's a shop in every area.
My son is thrilled to pieces as it is one of his favourite dishes and now he wants to make it for his grandfather...
I and khao swè go a long way... As a girl, it was one of those family luncheons were the entire family would gather around a table made of Burmese teak and food would be served in beautiful Burmese rice bowl in one of my grandmother's house who was from Burma...
Though she was a Bengali she spent her
maiden days there and had amazing stories to share...

Chef This is a popular breakfast in a suburb of Surat, India called as Rander. U forgot to mention that story too. Rander is mostly influenced by Burma

Same.. My mum is from burma. Ther migrated. We make chicken and mutton khiw suey. Rander is famous for burmese inspured food. Surti muslim food is inpured by burma

Oye bhai, aap ne toh Burmese noodles bana kar dil khush kar diya, I am from Myanmar. Aab waise toh hame pata nhi original cook book mein hai ya nhi, but yahain normally Veg Ohn No Khaut Swe mein soya chunks aur bean curd(tofu) dal te hai....meaty bites dene ke liye, aur deep fried split chickpeas cracker(Pae Kyaw) to serve with.....
