@@creationanomaly6026 She does. Her name is Hong Thaimee. She has a UA-cam channel under that name, and she does a podcast with Pailin Chongchitnant, another very amazing Thai chef on UA-cam who cooks authentic, easy to follow Thai recipes (that’s how I discovered chef Hong, actually!). She also seems to have a website, too.😊
Thai Northern cuisine is the most complex and secretive among Thai food. Family recipe are often kept secret. Many recipes usually require rare spices and stinky condiment like rotten soybean, specific kind of flowers, etc. Even chilli powder hits different in Chiang Mai. Not many outsider can cook like the local. Epicurious fans are so lucky to have Khun Hong revealed her authentic recipe.
This must be authentic because it's a very complicated dish. Is it worth it to buy all those ingredients and go through all those steps if you only occasionally eat Thai food? Why not just go to a restaurant.
I am so happy to see a recipe with the black cardamom! For me it is THE flavour that makes Khao Soi unique and sets it apart. I love chef Hong, please post many more videos with her!
It's so exciting to me to see how popular thai cuisine has become in the u.s. 10 years ago when I began my journey in a kitchen with Thai people, I was amazed at the recipes and how not many people.were raving Over it like sushi or Chinese food. Their homestyle recipes are to die for.
This video was awesome 😮 🎉❤. I can feel the authenticity in her work and her appreciation and love for her culture as it should be 😊😊😊. Keep it up Epicurious ❤😊
Did the Mae Hong Son loop on motorbike a few years ago. Rode from Chiang Mai up over Don Inthanon, stayed in many amazing small towns like Mae Chaem along the way. One of my best memories is of this incredible dish, Khao Soi. I've struggled to find anything that tastes anywhere near as good. Easily my favourite dish.
So glad that this channel chose Thai to teach Thai food. It's so important because Thais are extream serious about food recipes. e.g. We can't except Pad Kra Pow with basil. It must be holybasil only. Thai food use herbs a lot for aroma so if you put some herbs wrong, it might affect aroma and taste.
This video make me wanna get out and find some Kao Soi to eat right now! LOL Chef Hong splendidly present Thai food and our cultures as well. Thank you for do it so!!
Our addiction to soup as well as love for curry made the exchange between India and China within northern Thailand birth this dish with our lovley fruits. Truly an amalgamation of all the best cuisines.
Thank you! Khao Soi was my favourite dish when I lived in Chiang Mai 💛 I ate it 4-5 times a week and never got bored! I miss the city and the food so much!
I used to eat this almost every day when I was living in Chiang Mai. It's a shame that it's not a staple in Thai restaurants abroad, because it's my favourite Thai dish.
Thank you sooooo much! This is clear and nice. I fell in love with Khaw Soi Curry noodles when I remotely worked in Chiangmai and I'm going to cook it based on this video.
Whenever my foreign friends visit Chiang Mai, I bring them to a Khao Soi place. The gesture of squeezing a piece of fresh lime into the bowl is like an exotic ritual to them and the citrus aroma just enlivens the senses. Of course... fried noodle on top of noodle is the mix of fun texture they never experienced. The curry itself is full of aroma from both fresh and heated herbs. It is tasty, creamy, sweet and salty with the pungent from fresh shallot and add-on chilli oil. Thank you that you put pickles!😊 Kao Soi would not be completed with pickles. Although my friends could not speak Thai, they all can remember the name of this dish, and next time they visit Chiang Mai? Of couse, they all asked for Kao Soi. Thanks for such a detailed video. It's really fun to watch.❤
My mouth is watering. She’s awesome!!!! Love Thai food. This Thai restaurant in Rockwall, TX named Khou Thai has the best coconut water I’ve ever tasted!!!
Interesting, Khaosoi is already a fusion between Indian curry and Chinese noodle soup. Yet, we have another crossover of this fusion menu with local Pakistani cuisine. Wonder how that is.
Ate Khao Soi on our trip to Chang Mai for the first time at a Thai home that had their garage converted into a restaurant. Our elephant sanctuary tour guide that we befriended took us there, to a few temples, and of course, to drink Thai rum. Amazing food and even better company. I wish I could go back again soon.
We got our own version of Khao soi here in Pakistan which is definitely not authentic but it's still very liked. Very happy to see the authentic version I didn't even know it was a Thai dish.
She is my favorite chef this year. I have been to Thailand many times in my life, I took cooking classes in Krabi in 1997, Bangkok in 2005 and 2008, and Pukhe in 2009. My next would be Chang Mai 2024. Love love this day, K̄hxbkhuṇ
Ohh yeah .. We also call Khao Swè for noodles in Myanmar. The famous nation wide well-known dish is Ohn No Khao Swè. Slightly the same cooking way. But different spices and ingredients.
Thai cuisines are the best natural.. I love visiting Thai restaurants often..I don't know much about different foods..but green red Thai curry is my favourite..so far.. Thai food is delicious..less spicy
Interestingly, in my home town of Chiang Rai ,located next to Chiang Mai, authentic Khao soi is not sweet, while the one in Chiang Mai, such as this recipe, has some sweetness to it.
Can we blend them for finer texture?thanks for sharing this Northern Thai dish ! It is simple recipe and I love to make Khao SOI combined with Filipino recipe!
In Thailand we have หัวกะทิ(the first press of coconut flesh aka. coconut cream) and หางกะทิ(the second press aka. coconut milk) maybe she use only coconut cream so it’s a bit too thick from the regular khao soi soup in Thailand.

The khao soi I had in Chiang Mai was legitimately one of the greatest meals I've ever had, I still think about it all the time lol
Same! Literally the best meal of my life for like $1.25. It’s been ten years and I still think of it often lol

Agreed. Northern cuisine requires variety of ingredients and each place has their own recipe based on what herbs they can find
Definitely worth the effort for potluck / family gatherings.
I see cardamom, tumeric, onion and ginger here
I am so happy to see a recipe with the black cardamom! For me it is THE flavour that makes Khao Soi unique and sets it apart. I love chef Hong, please post many more videos with her!

You can hardly find a good khao soi in Bangkok, so... forget Thai restaurants abroad.
I’m currently in Chiang Mai, and I can confirm… it’s one of the best dishes I’ve ever had around the world!
Yes! More thai food! Thai dishes!

Curry noodles are the greatest type of food and khao soi is probably the greatest single dish
You won’t believe how common and popular this dish is in Pakistan 🇵🇰. We love it but of course over the years, there’s fusion with Pakistani taste.
Oooooo, I bet that fusion tastes brilliant.

As i'm northern thai, khao soi in each province are different flavor. In my opinion chiangmai is more creamy than the others.
Loved the way she said Pak chi roi na
God I love Khao Soi. Take me back to Chiang Mai.
Khao soi is the best Northern Thai dish!!
I love it
It's around dinnertime here and that looks really good!
The next dish ขนมจีนน้ำเงี้ยว (Rice noodle with Northern spicy pork sauce) pleaseeee

Nailed it Chef
This is so good.
that awesome and love it
I didn’t know such a thing as rough chopped chili flakes existed! Also this looks delicious 🤤
homemade flake usually rougher and spicier than store bought, they are too little in heat and just make the dish looks red.
Can we blend them for finer texture?thanks for sharing this Northern Thai dish ! It is simple recipe and I love to make Khao SOI combined with Filipino recipe!
This sounds sooooooo yummy
Looks amazing! 🤤 So this is a type of Thai curry then?
i love Khao Soi so much
thank you for sharing
i have a restaurant near me that makes fantastic khao soi. my favorite food in the world

Yeah, it should be more soupy but hey, hers look good too.
When someone make noises while eating you'll know it's delicious 😊😊😊
