hi helen! i come from indonesia, and we have salted eggs as well. I live in Germany now and really miss salted eggs but can't find duck eggs anywhere. WOW. I am surprised that you have so few dishes with salted eggs. I really thought there was more dishes the were a part of and I also was surprised that you usually don't use the egg white. Now, since I don't eat sweets, cakes, desserts.... in fact any sweet stuff ever and don't have people to give those sweet dishes to, I obviously wouldn't have much use for salted eggs. Still I'm glad to know how to make them and what to use them for.

Also I noticed that the store bought salted eggs always have some fatty liquid come out from the yolk when we crack them open. Mine didn't. Did I do something wrong or do the different methods produce the different results?
Is it possible to refrigerate this while it is brine-ing? I have a sensitive stomach & I don't want to risk getting sick...but if it will still work in the fridge, then I would love to give it a try. I already have all of those spices.

Oh okay I get it now. Boil to cook them then freeze for future use. Thanks for the tips but I could not get a single grain of rice to float even though I upped the pink salt from 200g to 250g with 1 liter of water. Not sure what happened. The solution is very salty already. Should I add more salt?
Hi Helen, just updating you that my first attempt at making the salted duck eggs using Himalayan Pink Salt worked. After four weeks they were perfect and today I cooked them and will freeze the cooked ones. Thanks for all your help.

You will cook the eggs before use. I don't see how refridgeration helps reduce the risk, if any at all.
