    Today I'm going to show you how to make breakfast casserole ahead of time.
    This healthy make ahead breakfast will give you energy and keep you satisfied for hours.
    This recipe is so versatile, so it's a great fridge cleaner, you can use up any leftover meats and cheeses that you have hanging out in the fridge.

    It's a lighter version of breakfast casserole, and definitely more creamy!
    It reheats so well!
    BREAKFAST CASSEROLE RECIPE
    (makes 4-6 slices)
    Ingredients:
    1/2 pound Italian sausage, or my Italian sausage mixture (250g)
    1 tbsp olive oil
    2 small zucchinis (250-300g)
    3 eggs
    1.5 cups ricotta cheese (400g)
    1/2 cup milk (120ml)
    1/3 cup ground oats or oat flour (35g)
    1/2 tsp baking soda
    1/2 tsp salt
    1/4 tsp onion powder
    1/4 tsp garlic powder
    1/4 tsp black pepper
    1/4 cup grated parmesan cheese (20g)
    NUTRITIONAL INFO (per large slice):
    341 calories, fat 15.5g, carb 14.8g, protein 35.1g
    Preparation:
    In a frying pan over medium heat add olive oil and cook the Italian sausage mixture until it's browned. Spread in the casserole dish.
    Thinly slice zucchinis in half-moons and spread over the meat.
    In a large bowl whisk the eggs, add the ricotta cheese, milk, ground oats, baking soda, salt, onion powder, garlic powder and black pepper, and mix it well until the smooth batter is formed.
    Pour the mixture over the veggies and meats, shake it up or move around with a fork to evenly distrubute the filling.
    Sprinkle with grated parmesan on top.
    Bake in a preheated oven at 350F (180C) for 35 minutes.
    Let it cool for 20 minutes, then slice into 4 or 6 equal pieces.
    Serve and enjoy!
    HOMEMADE ITALIAN SAUSAGE MIXTURE
    1 pound ground pork or turkey (450g)
    1 tbsp minced garlic
    1 tbsp chopped parsley
    1 tbsp red wine
    1/2 tsp dry oregano
    1/2 tsp crushed fennel seeds
    1/4 tsp black pepper

    It was damn delicious. I changed the recipe a bit, but it was so good.
    I put 200 g of cottage cheese and 200 g of greek yoghurt instead of just ricotta.
    I added peas, zuchinni, spring onion and spinach.
    Also instead of meat I added black lentils.
    And I roughly chopped some hazelnuts.
    So great.

    Very good recipe! I used vegan chorizo and mushrooms, zucchini, and red bell pepper. I did need to cook a little longer (probably because of the water in the veggies, I put them in raw). I'll be having this for lunch with a salad this week. Yum! Thank you!

      @@HowToCookSmarter Update: This recipe was a huge hit in our house. I didn't have any fennel to make Italian sausage, so I used some soy chorizo from Trader Joe's. It added a little extra spice to the casserole. We had it for dinner with a salad as one of our vegetarian options and reheated the rest for lunch the next day. It was light but filling and yet another one of Sasha's recipes that will be a keeper.

    Think I added too much zucchini, but i did add more seasoning. This is. Hmm. It probably would've been better if I hadn't used my leftover chicken. Part of me wishes I just went all veggie. Thanks for the recipe anyway!

      I use my brownie pan for this breakfast casserole, it's 8 by 8 inch or 20 by 20cm.

    Can you replace the ricotta with greek yoghurt?

      He mentioned before that Greek yogurt is a suitable replacement, but you need to strain it if it is too watery so that whatever it is you're baking doesn't come out soggy.
