    Ingredients:
    1 tbsp olive oil
    250 g chorizo sliced
    1 Onion peeled diced
    3 cloves garlic minced
    pinch of salt and pepper
    1 red bell pepper diced
    1 yellow bell pepper diced
    250 g pasta of choice
    1/2 tbsp dried oregano
    pinch dried thyme
    500 ml (2 cups) chicken or vegetable stock
    400 g (14 oz) tin of finely chopped tomatoes
    2 heaped tbsp tomato puree/paste
    1/2 tbsp sugar
    240 ml (1 cup) double (heavy) cream
    Good handful of spinach leaves chopped through
    Mozzarella small chunks
    75 g grated Parmesan cheese
    Fresh Parsley

      The most important part would be that it contains the starchy water that you would normally drain off if you just boiled the pasta. The extra starch in the sauce should give the sauce a thicker consistency.

    Chorizo is by far my favourite continental meat. I will definitely make this. I also make a chorizo and red bean stew, with tomatoes, peppers and red wine. It’s delicious served with crusty bread. X

    I've never tried chorizo, but this is similar to a dish I make with Italian sausage. I might have to expand my horizon because that chorizo looked good when you were frying it up.

      Thank you. Yes Chorizo can be adapted to pizza's as well like pepperoni. Its a fantastic sausage used in many bean stews. Best, Rik

      Try it for sure. Make sure you get the Spanish chorizo. The chorizos from Mexico and other Latin American countries are quite different.

    A Chinese chef when I first took to cooking over 55 years ago said always add a pinch of sugar brings the flavour out and this goes for anything with tomatoes in it 😊

    A camper van one pot winner. I put chicken strips in with the chorizo to get the flavours and protein in there. Love the greens added Rik! Makes for beautiful eye candy and one to add to the recipe for sure! I now feel very hungry lol! You make it a pleasure to watch buddy, keep it up! 11/10 once again!

    Spanish chorizo is different from the Mexican chorizo we get here in North America - the Spanish version is a cured and dried hard sausage, whereas the Mexican style we get here is more like loose fresh sausage meat; I think the Mexican style can be quite a bit more spicy and with lots of clove and cinnamon as well. I'm looking forward to trying your recipe, it'll will be fantastic with Mexican chorizo!

    That looks sooo good, Rik! I live in an area that has many immigrants from Mexico, plus Central and South America, so we have all kinds of chorizo available: Mexican, Salvadoran, Guatemalan, Argentinian, and probably more that I've forgotten. They are spiced/flavored somewhat differently. I can never remember who makes what, so I have to spend 15 minutes reading all the labels, until I find the flavor profile I'm looking for, if I have a specific dish in mind (else I just pick what I like, usually hot Mexican with jalapeños and cilantro, or Argentinian, with orange). Some of the other varieties use (or don't use) vinegar, green pepper, hot red pepper, and other spices. Always a fascinating trip to the Latin American grocery!

If you ever visit NY, Jackson Heights, in the NYC Borough of Queens, is said to be the most diverse neighborhood in the city, with over 160 languages spoken there. And you know that means a lot of great food, too!

    Looks good. I wish I could find Spanish chorizo easily to try this dish. I can find Mexican chorizo very easy but not Spanish chorizo. I know Mexican chorizo isaraw sausage and Spanishi chorizo is smoked😊.

    Easy TWO-POT chorizo pasta made! First, it's two pot because I didn't have pan like that! Do you have a link? These are the small changes I made: 1. tomato based sofrito by Goya instead of tomato paste,. 2. Beef bouillon instead of chicken 3. Added 1tsp guajillo chili powder 4. Added 1/2 c sour cream ( cuz I confused the creamy pasta recipe) I wish you could be see me drooling and then eating 2 handed! It is so good Rik!

    The best chorizo sausages are made up here in Asturias, Spain. Many of our neighbours make them every year at home. Try a tortilla with chorizo delish!

      @@BackyardChef Asturias is famous for it's fabada bean stew; made with beans, morcilla & jamón serrano it's fabulous. My father-in-law worked down the mines and this kept him going!

    Our chorizo in my neck of the woods gets squeezed out of the casing. Then we clean it up by pulling out the fat globules we don't want. My ex-girlfriend taught me how to cook it. I thought everyone cooked it that way! 😂

      What Rik is using is not the Chorizo found in most US grocery stores. It is more like a Spanish bratwurst. You might be able to find something like it in the butcher case at WF. ❤

      @@sitresjolie2343 I have never seen it anywhere. I'm in Texas. Between Corpus Christi, San Antonio, Marion, Bandera, Floresville, Poteet and El Paso I have never come across it. It's Spanish then, not Mexican. 😆

    The chorizo that I get in the store is not a solid stick like a sausage it is more like ground meat
