I used to work for an Egyptian woman and she’d make me a cup of Arabic coffee with a spoonful of sugar but also a spoonful of ginger. I was really hesitant about the idea of ginger in coffee but it was delicious
I was so surprised and excited to see you working with Onyx!! I used to live in NW Arkansas and Onyx was my go to local coffee shop. Their coffee is so flipping good, and it’s so neat to see them getting more and more national recognition.

Have you tried adding powdered milk to milk rather than freeze distilling? This should theoretically be as good as freeze distilling, as the process of powdering has very minimal impact on the flavor. I honestly think this should be considered as freezing, thawing, and throwing away half of the diluted milk (I mean what else are you going to do with bad tasting milk?), is incredibly wasteful. In my testing, 45g of milk powder dissolved well in 1L of cold milk with heavy shaking.
@@Luckycatzassosiation Be sure to purchase powdered whole milk. There are plenty of products that doesn't use whole milk (non-fat, other non-dairy products mixed in, etc). Those, I imagine, will taste horribly.
Actually i am amazed by your USBC series hence i also wonder are there are more competitions like these... Like for teas... wines... Milkshakes... Slushies.... etc......... Even like for ingredients like milk, butter, sugar, rice,....etc....
There's a fair bit for coffee tho. There's the USBC but the people who run that also do brewed coffee, latte art, etc. Also, look up Aeropress Championship

Isn’t it great that Morgan won the US Barista Championship today in Boston? The program was awesome all 3 days. Morgan is on the way to compete in the World Championship later this year! Onyx coffee, Andrea and Lance were a great team helping Morgan.

Really informative, as I only knew of Arabica and Columbia beans. If this third type of coffee is as you described, I surely would love to try it! The closest I come to doing anything espresso, is through my moka pot, which I just got a few months ago. I’m buying most of my beans through a beanery coffee shop, where they create wonderful coffee blends, and have expanded their operations. Until recently, was content to buy the popular commercial brands of coffee. But after trying a couple of different brands and blends, I have found that the commercial heavyweights are too bitter, sometimes rancid, and just unpleasant. Now I strive to grind my own beans (which I just did before watching your video) and select better coffees. Since finding your channel, I keep coming back to see what else I may have been missing! I’m rooting for you in the competition!

I think one of the first coffees I got on my Trade subscription was a eugenioides variety (Gimme! Angel BBs). I was surprised by the tiny beans, I the espresso I got out of it was very sweet. I think it's my favorite coffee so far from my subscription. Best of luck at competition, Morgan!

I went to Onyx in Bentonville last September and it was pretty bomb! I love the space that they have. If ever you're in Milwaukee, we have some pretty great roasteries for you to check out.
I wonder if a blend of Eugenioides beans with either Arabica or Robusta would be something good to try. Maybe there is a way to get both the bolder flavors from typical espresso along with the sweet fruitiness from the Eugenioides. I think this would be something fun to experiment with.
Is it wise to reveal exactly what you're planning to do before the competition? Or does the menu have to be locked in, in advance of the meet? I always felt it was better to not let a competitor know how you think.
Good question! This competition is very individual and the planning is super time-intensive so sharing what I’m doing doesn’t impact anyone else. I think it’s super fun to share the process and honestly, if other competitors can find helpful pieces in what I’m doing, then I’m all for that! Everyone’s routines are so personalized and planned out that nothing is really going to change, especially this close to the competition. Hope that makes sense!

It’s been so fun learning from everything you’ve done in the past few years! I hope you do incredibly well at USBC and have the BEST time! What espresso machine/etc would you recommend? I don’t have a lot of hands on experience but I have been learning so much and plan on doing a lot more with coffee in the future. I think it would be so cool to use coffee as a way to bring people together and just bless others in general! My husband and I have been planning on this for awhile and should be able to afford most of the stuff we need, soon! I would LOVE any advice if you have any!! ❤️

This has to do with a very very limited quantity of it being produced every year! Onyx as well as Gardelli have carried it in the past but it’s not a coffee that’s available year-round in any way
Ona Coffee sold bags a few days ago and was sold out in minutes. I feel you. Amor Perfeto had some right after the WCC in October but doesn’t ship to where I am.

Oooh! Eugenioides made a splash last October in the World Coffee Championships and it’s VERY hard to come by for us common folk who love to try unique coffees.

Superinteresting hearing about that first coffee as a species. Curious if all the practice and the future competition will be from the same batch of coffee? Would that an important aspect? Is it a consideration if they aren't?
So during practice, we find the “sweet spot” for each coffee (roast profile, days off roast, etc) then we try to replicate that as close as possible during the competition. There’s always some very minor variation that happens but for the most part, the coffee will taste nearly the exact same as the roast that I’m practicing with
Do you already know which machines (grinder and espresso machine) you are going to be using at the competition? Can you choose or are they imposed by the organisers?

Those beans look similar to Puerto Rico’s coffee plantations. I love the low acidity in the coffee it tastes sweet even without milk or oat milk.
