That’s easy! There is No sauce you need to grate 3 cloves of garlic and mix a little , when you shape your naan place only the grated garlic mixture on top of the naan, little oil as possible you can also sprinkle some fresh chopped coriander as well , now ready to place on your hot tawa or in your tandoor , For the cheese naan use cheddar, grate the cheese and use that to put in the middle of the naan, let it rest for 20 minutes before you shape and start to cook!! Thank you for sharing your knowledge chef Din. Ive managed to make a number of dishes and I must confess that I think they taste nicer than those from my local Indian Rest' :) .. There is one technique I would love to see you do and that is to make a naan bread on a tawa. Ive tried to make naans using different pans but they just dont compare to those out of a tandoori oven.. I seem to miss that sweat tasting toasted side. With a grill I can replicate the top side but its the bottom side of the naan I cant get right.. Do you have any ideas sir? Buy yourself a tawa a cast iron flat pan , place on the cooker until very hot put your naan on it as soon as it puff up place under your pre heated grill for a few minutes, job done and perfect naans!

Mix as I have shown to get best results! You will see there is not much needing involved! And you mustn’t over mix!
