Spiced Pickled Apples Canned Method

  • I made this batch last week. I also made them 3 weeks ago too but forgot the maple syrup and I did a quick pickle method. This time I used a hot bath method and added the syrup. They were awesome last time and I can't wait to try these. Let me know what you guys think.
    Full Recipe:
    9 lbs of apples
    4 cups of cider vinegar
    4 cups of water
    2 teaspoons of pickling salt
    4 cups of brown sugar
    1 cup of white sugar
    8 cinnamon sticks
    1 cup cloves
    1 cup Maple syrup
    Optional: 2 tablespoons of red pepper flakes (Pedro Style)

    Today is 1-12-20. As of today I have eaten several jars of these apples and have shared as many. A friend at work shared them with his wife and she loved them. Personally I like my apple crisp and these have the texture of an apple in a pie or cobbler. They taste wonderful but i like a more crisp apple. I bet if you just poured the brine over them in the jars they would be perfect. Anyway, just my thoughts.

      They don’t turn too sweet as you added lots of sugar plus maple syrup?! I want to make it but I’m unsure if they turn too sweet or not!

      edward duran it depends on whether you use the quick pickle method or can them using a hot water bath. Quick pickle I have kept them in a cabinet for a couple of months but a couple of weeks are usually recommended. If you can them they will last a couple of years. Oh, they are awesome!

    Question: do I have to buy a special “pickling salt” or can I use the extra fine salt that I use to cook and season with? Is there a difference? Thank you for a very cool recipe!! Will make these as soon as I get an answer on the salt query 😊🍏🌶🍎

      I sometimes use a kosher salt but I usually use pickling salt. I have given those apples as gifts and had a request for more...

    When you say refrigerator pickles do you mean once they’ve cooled you put them in the fridge to ferment?

      MrBeenReady. When I say refrigerator pickles or quick pickles it simply means that I do not can them by using a hot water bath. (Boil them I the jars for 10 or 15 minutes). If you can them they can last on a shelf for several years. If you just use the refrigerator or quick method (they are the same) they can last several months on a shelf or in the frig. I would suggest putting them in the refrigerator after they have been opened. I hope that this helps. I am thinking about doing a short video on the differences.       If you use the canning method they can store for years. The quick pickle method for a few months. That is what I have read and experienced.

      I forgot the maple syrup lol but seemed to taste good so far. I will know in a week lol

      I had to open one of 14 cans, it must have leaked some brine during water bathing. It tastes pretty good without maple syrup. Next batch I will do with maple

      To each his own.... I actually put ginger in some today! I like trying new things!!! That was for cucumbers though.

    Wow… Great recipe but I have never in all my 60+ years seen anybody tighten a jar so tight before a water bath…😮

      I think that I tightened them too tight but I had not done a lot of canning before I made these...
