How to make honey pickled apples, anime cooking (Spice and Wolf)

  • Today I'm going to show you how to make honey pickled apples from one of my favorite animes, Spice and Wolf. this is a recipe I've been developing and experimenting with for some time now and I am so excited to share it with you now. below you'll find the recipe that I used but if you try this and have any notes please let me know. I am always looking for feedback to improve this recipe

    Honey Pickled Apples
    2 Apples, peeled, cored and sliced into wedges
    ½ cup Water
    1 cup apple cider vinegar
    ¼ cup Sugar
    ¾ Cup of Honey
    1 tablespoon fresh ginger, peeled and rough chopped
    ¼ teaspoon Allspice, ground
    ⅛ teaspoon Whole Cloves, ground
    ½ teaspoon salt
    1 Cinnamon Stick
    1 tablespoon Lemon Juice
    3 teaspoons Cornstarch
    In a medium saucepan combine all ingredients except for cornstarch and bring to a boil. Continue to whisk until fully incorporated.
    ,reduce heat to medium low and allow to simmer for 10 mins.
    While the pickling liquid is simmer, prepare the apples.
    Peel the outer skin of the apples. Cut in half and remove the core. Cut into thick wedges.
    Place apples into a container of your choice and pour pickling liquid over apples and allow to sit for 20- 30 minutes till room temperature.
    Make sure to place something over top of apples to weigh them down so they stay submerged in pickling liquid.
    Strain liquid from apples, and place pickling liquid back onto medium high heat and allow to reduce for about 10 mins.
    Add in cornstarch slurry, cook for an additional 2 mins then remove from heat and pour over apples and allow to cool completely.

      Can you hot water bath these mason jars and seal everything?

      I imagine that you could, I designed the recipe so that isn't wholly necessary but it wouldn't hurt it either way

    They were honey pickled peaches, not apples.

      Peaches yes but apples were also mentioned. In the very least holo would appreciate them 😁

    I just made a batch of honey pickled peaches. I wish I would have watched this first. Adding some corn starch to the brine to make a syrup would have been a great idea.

    I came here from Spice and Wolf! Wondering why the video is 1 year ago but S&W is fairly new in Netflix.
    Anyhow, what’s the purpose of soaking the apples in marinade then draining it again? I really wanted to make the recipe.

      Hey no problem, i marinated them first so they can actually pickle, then i strained the liquid back into the pot so it can reduce and achieve the desired thickness.

      Winter's coming soon and this would be a wonderfully appropriate recipe for lots of people to make.
      It's a shame pickling for long-term storage it's such a hassle. Especially since everybody has glass top stoves these days

    If you let these sit (both in fridge and on counter) what happens to them over time?
    Are they preserved or will they spoil?
    How long do they last until they eventually spoil?

      The shelf life is pretty long, i can't say for sitting on the counter but in fridge you'll get a solid 2 months at least

    So my suggestion to not have apple flavoured syrup is to pack the jars as tigjtly as you can with apple, dont remove the skins, only make as much liquid as you need....you can always top up with water, and if you are using good honey, dont boil it and waste all of those amazing aromas, put it in the jars first or in the liquid at the end.

      Good suggestions, i did need to adjust the ratios on my recipe but i was also trying not to buy a lot and have a lot left over. Thank you for your suggestions

      @@MakerCuisine thanks. I was a bit worried with the large volume you had....but we all have different tastes and we are all learning. Also, if you sterilize the jars....ie pour boiling water in them first, there is no reason they can't last for years properly sealed when hot....ie like pears and peaches.

    Seems that the apples are only a slight addition to that marinade. Will make mine where apples are the main ingredient.

      I wouldn't agree with necessarily with your statement because the apples and the flavor was the point of the recipe. That said i definitely hope you try the recipe
