For "crunchyness" of pickles you can use mustard seeds and of course horseradish (pieces of it if is a small jar), and also salt with iodine will soften your pickles, so use salt without iodine (be aware that not all "kusher" salt is iodine free). The salt with iodine is a modern "invention" (silly if you ask me), that's why today pickles are usually bad. Hope that's helpful, even if is late. :)

The half soft and half sour conundrum you guys experienced may be due to not cutting the ends off the cucumbers. Americas test kitchen says there's an enzyme in the blossom end of cucumbers that cause them to go limp, so they recommend cutting the ends off.

For generations pickling was the only way of making the cucumbers last and it included onions, garlic and peppers. Obviously there were beets, eggs, and then Sauerkraut which is fermented as well. We need to keep these skills a live.

Usually people cut the blossom end of the cucumber off as apparently there’s an enzyme
that can keep cucumbers from keeping they’re crunch in canning.
You can also soak your slices in a salt water ice bath overnight, just be sure to rinse well before packing them into jars!

Always cut the vine end off or they will get soft. Cut the end off and they stay crunchie. Better wash you hands before you touch the pickles again.
