    Hi Joe, I just made this pie today. OMG, probably the best apple pie I ever made in my 60 plus years. I will be going to Italy in May of 2023 for the first time, and watching your show just brings me back home. Thanks again and Happy Thanksgiving to you and your family.

    Well this is 'absolutely' the best pie I have ever made, crust to Honey Crisp. I am still patting myself on the back - many thanks to you. The crust is unbelievable, it actually crunches. I made it like you did on the counter and just cut the butter in. Have to say the sugar on top is essential as the dough is not sweet. Will this hold up for my Tourtiere? It is not too fatty, LOL, I won't put sugar on top, Thanks for posting, great channel.

    How far ahead of time can you make the crust. Thought I would make a few and refrigerate so they would be ready when I needed them?

    Man, I wish I could cook and work with you so I could learn more and find out what I do wrong at times in my baking. I especially would love to work with more bread doughs then what you even have online. I did make your bread that you bake in the cast iron fry pan recently though, and I've previously used your pie crust recipe a while back. I like them both.

    This is literally the 6-8th apple filling recipe video I've watched & yours wins! Hands down, all the ingredients I want to use are in this filling. Only the cheese I'm not adding. I made your pie crust so why Yt took so many times to recommend the filling, ya got me?! I'm making a crumb topping though cause the other half of the crust needs to be used for a pumpkin pie. I will follow up with how it goes, minus the cheese. 😉🤞

    Hey Joe, I see that you did an edit and voiceover with the cooking time. 30 minutes at 375 and then 60 minutes at 325 did you do that hour and a half to cook a pie am I understanding this correctly Thanks. Fitzy

    This man is so clever, he cooked an apple pie transforming an American recipe into an Italian one, just putting the mascarpone in it. Tomorrow I'm going to cook a traditional Italian chili con carne and con mascarpone 😁 or maybe an Italian Shepard's pie obviously with mascarpone in it.

    The crust turned out Great! However, I did not turn while baking, forgot. It turned out soupy! Tasted good, a bit tart...but WHAT DID I DO WRONG!? One side the sauce did turn out thicker.

    Joe, I made two apple pies using your crust recipe which came out fantastic. I had a problem with the filling, I like adding 1/2 cup cranberries, as well as the spices you used, I also added 1/4 tsp cardamom and 1/4 tsp ground cloves. also, I used cream cheese as the American substitute for mascarpone. When your recipe called for the 2 tbsp of flour to thicken the juice, I added arrowroot which worked many times before, but not this time. I ended up with about 1/2 to 3/4 cup of liquid inside the pies. The taste was really good, but I would not be happy to entertain guests with them. Was it my mistake to use arrowroot to thicken the filling? And/or the cream cheese? I will try this again, thank you in advance for your reply.

      Linda the house is a large victorian and has two sets of stairs to get to the main floor. This set had a door years ago and was the servants entrance to the kitchen. I removed the door but kept the stairs. There is another set for the main house on the other side separate. That is why the stairs are in the kitchen.

      The sugar on the top is caramelized and came out dark in the pick. I will reshoot the pic.

      I use granulated sugar on the top and it gets dark when it caramelizes Like a creme brulee. It is not burnt. It is delicious!
