Ingredients :( 33pieces)
【stuffings】
-250g Whiteleg shrimp (peeled) (approx. 300g with shell)
-13 Whiteleg shrimp (for toppings) (as many as you like)
-50g lard (minced )
-75g Boiled bamboo shoots (soft part of the tip)
-5g potato starch
-6g caster sugar(or light brown ugar)
-4g salt
-3g soy sauce
-a little bit white pepper
-3g sesame oil
※When washing shrimp, use 1/2 tesp : salt , 2 tbsps : potato starch
※ Use 2 tsp : sodium carbonate, 600 g : water for the process of making shrimp springy
【dough】
-80g wheat starch
-80g potato starch
-190g boiling water
-5g lard

-250g バナメイエビ(剥いたもの)(殻付きで約300g)
-13本 バナメイエビ(トッピング用)(お好みで)
-50g 豚背脂(ミンチ)
-75g タケノコの水煮(穂先の柔らかい部分)
-5g 片栗粉
-6g 上白糖(or きび砂糖)
-4g 塩
-3g しょう油
-少々 白コショウ
-3g ゴマ油
※エビを洗う時に塩:小匙1/2、片栗粉:大匙2 を使用
※エビをぷりぷりにする処理にかん水:小匙2、水:600g を使用
【生地】
-80g 浮き粉
-80g 片栗粉
-190g 熱湯
-5g ラード

I will like to share mine:1,wheat starch 37g 2,tapioca starch 37g 3,water 80cc.(1+2+3)+4)4,Boiling water 150cc let it warm then make a ball 5,Topica Starch 37g ,6,oil 5 cc (18g@---20)try.
