Cheese making Akkar Shanklish

  • Akkar is in the Northern district of Lebanon. Traditional matured shanklish cheese if their specialty and it is the only matured cheese in Lebanon as the country mostly produces fresh milk cheese and curds.

    Hello I am from India... I use to have a Lebanese friend he use to bring shanklish for me... I just love this cheese thanks for the recipe I’ll surely try this at home... lots of love from India 🇮🇳

    When you dry the balls to let them dehydrate (before you cover them with oil and zaatar), do you let them dry in the fridge or simply at room temperature?

      Hi I would say it depends on the room temperature. if it is summer or if you have heating in winter use the fridge. If the room temperature is cool, you can store it outside. Just like for butter or other foods.

      Hello Nathalie, well it is chili powder. You can actually add the herb or spice you like or keep original flavor.
