      One suggestion about your merch : have you thought about a butcher style apron and / or a Japanese style apron for the ladies ? I would loooooove that ! I think with your logo , would look super elegant. 👌 just an idea....

    My daughter and I made this dish. We didn't have spring onions and we omitted the cilantro since she doesn't like it. It still came out delicious and I will definitely make it again. Btw I found the Chu hou paste at my local Asian store (99 ranch market)

    Managed to get the "chu hou paste" ... and had everything except the avocado oil ... used extra virgin olive oil ... I trust it didn't make that much difference. It was my first time cooking with King Oyster mushrooms, they're really nice ! I had some of the freshly made Hong Kong Curry with rice when it was fresh ... but I tell you, it was so much better/integrated after it sat cooling on the stove for a couple of hours ! Much smoother !! The curry powder I used was a mild one I got at the Asian supermarket called Dan D Pak "special blend curry powder", which mentions red pepper way down in its list of ingredients. I think next time I'll up the "heat" with a bit of added red pepper of some sort. I also think I might try it with cauliflower substituted in for the potatoes. Thanks for the recipe !

      Did you find the chu hou paste at Asian speciality store perhaps? I doubt I can find the king oyster mushrooms *but* whole foods might have them....thank you!

      @@valnaples yes, in an Asian supermarket. I guess it gives a “Hong Kong” taste. I looked up other recipes using it, and they almost always involve meat. I’m a vegetarian so I don’t know home office I’ll use it. I might try adding half a teaspoon or so to instant noodle dishes. I often dress them up with mushrooms and dried red onion flakes, ginger/garlic paste etc.

    This recipe was fantastic! The sauce was so luxurious. When I told my ‘meat and potatoes’ Chinese husband that there was no meat in the curry, his response was, “With sauce like that, you don’t need meat!” I was able to find the chu hou paste at 99 Ranch. It tastes and smells very much like Hoisin sauce. Thanks for a delicious Sunday night dinner!

    Now that, my friend, looks amazing. I need to get of my butt and find an Asian market in LA. The best two markets, Bristol Farms and Whole Foods don’t have a large enough Asian section and no King Mushrooms. Having lived in Vancouver for 10 years, Asian markets (good ones) was an easier task. Thank you again and hello from Los Angeles. My bf is Taiwanese. I must surprise him and make this delightful curry.

    I made it! It’s pretty ok. I used red potatoes and a Korean yam, I think it was. I couldn’t use chu hou because the only one they had at the market had honey in it so I used hoisin.

    I love your recipes, especially any types of noodles. With your guidance I have tried and learned to cook different types of noodles. Also love the fact that you're cooking vegetarian/vegan dishes. I am lucky to have access to most of the ingredients needed to cook with you; fresh vegetables, noodles, sauces, spices and herbs (shout out to Asia Market in Dublin!). I have an idea/request. I often buy jars of sauces that I use for asian cooking but most of the time after one use they stay opened at the back of the fridge until they get mouldy and I need to throw them away. I do cook a lot and use most of the spices and other ingredients but the sauce often go to waste. And I don't like wasting anything in my kitchen. Do you think it would be good idea to mention (in the video or video description) some other recipes that also contain the sauces or spices you use in that particular dish. It would make planning ahead much easier. Thank you for sharing your passion, skill, ideas and great taste!

      Piotr! Just pour the remaining sauce into a plastic “Ziploc” small freezer bag. Don’t overfill. LABEL it. Lay flat on top of something in your freezer eat voila! Ready for next time. Freezes and defrosts quickly due to flat shape, and you can stack with other bags. I live alone and do this not only with ingredients, but also with spare cooked portions of many things (because it’s tough to make soup or dhal for one lol, or use an ENTIRE can of coconut milk at once)

    All your recipes look so delicious. So healthy. Look like you can use them if trying to lose weight. Plus, with my gluten and dairy allergy, I can eat just about all your meals. I wonder if I can find that bean paste here in Australia.

    Absolutely love these videos and your recipes! Just a little feedback, I wouldn’t bother adding the cheesy music into the video, sometimes listening to the organic sound of the peeling and chopping of the vegetables and the sizzling & bubbling of the pan is all we need !🙌

    I was looking for a curry rice recipe literally minutes before you uploaded this! What are the chances! Now I'm definitely going to try it, although I'm going to use miso instead of the paste you use since I can't find it here.

    What other veggies can i add other than mushroom?..can i add carrots?

      I think carrots would add other flavour. I wouldn't add them 😅

      Definitely carrots, celery, more yellow onions for larger pieces. I like to add yams, sweet potatoes, hard squashes, snow peas and celery to my curry. Sometimes corn and eggplant, but be sure to dry cook it like the mushrooms to release the water. I generally don't add broccoli or cauliflower during the cooking but will add steamed or sauted to the bowl just because they can have a strong taste.

      @@doof3231 absolutely... enjoy your curry adventure. Root vegetables in the winter with curry are delicious. Play around with veggies you know and love then add a few news ones for adventure.
